Must spend 10 minutes in store

I did an airport coffee shop this week that required that I spend a minimum of 10 minutes at. It was jut a counter with no place to hang out. There was a line so my time in line counted as the wait time. I then had to wait for my drink to be made. Then I had to stand there for three minutes. I put my coffee down and rummaged in my bag. It worked out. But I'm wondering what I would have done if there wasn't a line and no one was around. It would have looked funny to stand there for ten minutes. I'm wondering what others do in these situations.

Use the restroom... Wash your hands... Spend a couple of minutes pondering your drink... Ask if there are different choices for coffee beans....

There was no bathroom. It was just a counter to walk up to with people in front and behind me in line.
The purse rummage works well. If it is not forbidden, play with your cell phone. Most airport places have lots of windows onto the walkway. Check your watch and scrutinize the passing crowd as if you are looking/waiting for someone. When your time is up head on out as though you are still looking for the person you were waiting for.
Pull your phone out and pretend to be texting someone while you jot down some notes and make some observations. Or put the phone up to your ear and pretend to be talking on the phone. Assuming, of course, that you haven't been warned about not using your phone on the shop. People in airports are glued to their phones, so standing around for a few minutes while you "take a call" or "send an email" won't look unusual at all.

Easy. I can easily people watch... Well, watch the workers for 10 minutes.

I think in an airport it would not look strange to just stand there as long as you are not staring at the baristas like they forgot something. The coffee shop makes a good designated meeting spot for two travelers. You could be waiting for your companion to come back from the bathroom or from making another food purchase. I honestly don't think they would think twice about it.
