Completed Airport Coffee Shop correctly, yet MSC won't pay me due to employee error

If they have nothing in the guidelines about handling the shop differently if they can't provide the right coffee, it sounds as though they do need to pay you.

Edited to add that with the information from SoCalMama, it would appear that there was information in the guidelines specifying what to do, so it does indeed sound as though you did not follow instructions so have not "Completed Airport Coffee Shop correctly" as you state.

No they should not pay you. It specifically says not to order anything beyond a coffee beverage, which means when you ordered a muffin you ruined it.
I did 10 of these at various airports this month. Considering there was a giant sign at every single location, I find it hard to believe that they didn't know what the drink was. Regardless it tells you what to do if they don't have the drink.
I don't know - the one I have done that requires they know a special coffee also allows for muffin/baked good purchase if upsold. I also have had them not know the coffee I was asking for (but this was a few years ago) and that was not a problem. I could then order whatever drink I wanted.

I'd have to check the notes, but I think you order a small coffee or small latte. I have probably done 50 of these, and I've never had it happen.

ETA: It is listed in two different places what you need to do.
"If the drink is not available, this wil be verified by (client name), purchase an alternate beverage and explain below."
"If the restaurant is out of the item you are required to order, it is required to order an alternate drink."
