Now what do you suggest I do with the monster zucchini my neighbor gave me from his garden? I want to make something I can easily share with him - other than zucchini bread since I know he already makes that himself.

Techman, you may be right. I know he uses no pesticides in his garden - only companion plants and ladybugs, but I can't speak for the seeds.

Anyway... those little mini itty-bitty chocolate chips work best. They never get hard inside the bread ~ like they're always melty-fresh. smiling smiley

Hmmm... I'm thinking tempura for hubby and me, as well as salad. Can't give salad to neighbor when he has more salad ingredients than he knows what to do with.

For neighbor it'll be the cupcakes, I think. Bonus: I get to use the vanilla I made last month; it should be ready about now.

You could make a ratatouille casserole and freeze it. Always good to have ready-to-go dinners in the freezer for those nights when cooking seems like torture.

I've only made ratatouille once before, and didn't care for it. But, the idea of a casserole is a good one. His wife works a lot and he's on his own for meals.

The fried chicken salad actually seemed gross at first until I thought about the flavors of each ingredient and turned it over in my mind some. It takes a person with a lot of vision to come up with something like that.

These are yummy. Can be switched up, with the substitution or addition of: Tabasco, Red Pepper Flakes, Cajun, Italian, Chinese Five Spice, BBQ rub, Ranch . . .

I wanted to make the cupcakes from the links you posted, Kimmiemae but didn't have orange juice. So I found the chocolate recipe and used the frosting recipe from your link. OMG that frosting is to die for! I ate a bunch of the left over frosting with a spoon. Shhhh. Don't tell. winking smiley

That's the old way of doing things, Still. I had trouble getting it the right consistency to pipe. The flavor was so spot on, I didn't want to tweak it any more so I just settled for schmear. The new way is to allow some of the cake to show through. Gotta keep up with the trends. winking smiley

I'm glad you liked the frosting. Usually after the first time you make a recipe, you "know" how to do it so next time your frosting would be able to go all the way to the edge, if you so desire.

That zucchini pizza looks awesome with all that cheese. My weakness is pizza.

Kimmiemae, thanks again for the link to the Taste of Home recipe you found. My neighbor came over and dropped of some of his giant carrots he just pulled and raved again about the cupcakes I made them. He mentioned the frosting specifically, so I just came back to this thread to get the link again. I'm going to make him some zucchini, carrot and apple bread and frost it with that frosting so (hopefully) it will be like a caramel apple bread but made with his home-grown veggies.
