Having gone to high school with the son of Krug Winery in Napa Valley and his bringing 400 bottles of a beautiful white wine to each graduate at our last reunion...I prefer not to make my own wine.

Would a couple drops of bleach ensure no mold or will that kill the yeast as well?

Yes, it will kill the yeast and your juice will not ferment.
DavePi, when will you taste the results?

I made it on the 4th. I'm going to wait a few weeks until I see the bubbling thingy stop. I can already smell the alcohol and it smells divine.

Ugh Honny, I shudder at the thought. It can't be good.

I decided to try some of it today at the 2 week mark. It's tastes pretty good, just like any table wine. It's got a decent amount of alcohol. I added 2 cups of sugar in the beginning but it only just tastes slightly sweet. Next time I'll add an extra cup of sugar. I'm gonna make white grape welche juice next. Pretty happy with the results.

I'm gonna invest in a couple glass gallon jugs and make a bigger batch.

Dave, that's great!!!!!!

You said it tastes pretty good; are you comparing it to a branded wine, or using your taste buds?

Tastes like a typical red wine you'd buy at the store. I'm gonna be drinking more wine from now on, with my breakfast, lunch, dinner and when I wake up in the middle of the night ;D.

Breakfast Wine, that sounds like a good name for your wine!

There are some many flavor profiles for wine, it's to say any one is typical. Can you be a little more descriptive? What two things popped into your head when you smelled it? What about when you tasted it?

Yeah, it's hard to say what's typical for different people. To some people, Arbor Mist or Gallo, or maybe some sort of Moscato is typical. To others, it might be something like Cline Old Vine Zinfandel or Di Seno Malbec to name a few good but not pricey wines. Anything slightly sweet is too sweet for my tastes.
When I smelled it, I immediately noticed the grape smell. Followed by alcohol smell. Then when I drank it, those two blended nicely together to create a wine taste. I'm gonna ask my brother to try it since he is a fine dinning waiter so he probably knows more about wines than me.

DavePi, what's a "wine" taste?

When are you making your next batch?

I would say a wine taste is something fruity with a moderate amount of alcohol.

The gallon glass jug and air lock that I bought on amazon should be arriving tomorrow so I'll probably make another batch in the following days.

I'm gonna use 100% juice concentrate as oppose to the added sugar ones with high fructose corn syrup. In 100% juice concentrate there is no sugar added and is simply the grape's natural sugars, however half of the vitamins are lost in the concentration process.

For 1 gallon, it costs 4-5 dollars for the ingredients which comes out to around a cost of 1 dollar for a standard size wine bottle(750ml).

Dave I'm still intrigued by the taste. How would you describe the fruit flavor? What about the alcohol? What two words come to mind for each?

The juice concentrate will be bottled or frozen? When I think concentrate, I think of the frozen canned stuff.

$1 Breakfast Wine...I love it!

My Dad used to make his own beer. I buy all my wine from Trader Joe's and Central Market.
Dave, what's going on with the Breakfast Wine?

It's going good. I have 1 gallon of white grape and 1 gallon of apple juice fermenting.

Dave, that's fantastic. I am really glad your project is working well for you. Now please hold my hair while I puke (just kidding). I am sorry, I had to do a DavePI move by making a horrible joke. I seriously do hope your wine works out to your taste satisfaction.
Dave, that's awesome! And you are expanding!

Didn't Boones Farm make an apple wine? I like wine a lot, but I've never thought to make my own. Keep up the good work, and keep us posted!

Would you call a wine made from prune juice plum brandy? Or how about cranberry juice or Crangrape.
DavePi, what's happening with the new batches?

I'll gonna wait 1-2 more weeks till I put them in the fridge. it looks cloudy so I hope it clears up after I chill them. The apple wine smells pretty strong since I added 4 cups of sugar to it.

Hi DavePi! What's going on with the Breakfast Wine?

"I told myself to quit you; but I don't listen to drunks." -Chris Stapleton
The apple wine I made tastes decent. However the white grape wine was extremely bitter so I threw it all away. Not exactly sure what went wrong there.

Thanks for the update! As with any hobby, it's all trial and error.

About the bitter taste of the white grape wine, how else would you describe it? How did the recipe differ from the apple wine?
