What are you having for dinner?

I arrived at my Charlotte NC hotel at dusk to find that local businesses are expected to start shutting down within an hour or so, due to impending sleet and snow. (This area has less snow remooval equipment than even Washington DC, which is saying a lot!) I was advised to order something delivered ASAP. Chinese, starting with hot and sour soup sounds like just the thing for the NC version of a blizzard. I have a frige and microwave in the room and am prepared to hunker down an extra night if the roads are bad tomorrow. So, I will order a LOT of Chinese food.

el pollo loco~ They opened one really close to my Aliso Viejo home AS we were leaving.. I was totally p.o.'d! I LOVE IT, have it when I get to NV and when I went back home in 2012. . it was BETTER than I remembered.. In 'n Out blew.....ugh! Five guys rules!


We had leftover herbed pork loin roast w/wonderful mashed potatoes from a $$$ restaurant downtown.. oh, the perks of working at a food bank smiling smiley smiling smiley and, home canned harvard beets.

Pulled pork in the crock-pot, leftover broccoli and if I get ambitious I'll make a salad.
I made an old fashioned roast chicken dinner with mashed yukon gold potatoes, a jar of home-canned corn, tossed salads and a red raspberry pie.

Homemade tomato soup (my next present to myself will be an immersion blender), homemade breakfast muffins (4 ingredients and so easy). Put some grated parmesan in soup and sooo good.

Finishing up the leftover roast chicken in a gravy with veggies and having it as chicken and dumplings, a side of green beans simmered with bacon and onion and I just hauled a shoo-fly pie out of the oven.

I am making beef stock, from scratch (roasting marrow bones, etc.) I don't know whether the final soup (beef veg) will happen tonight or tomorrow. Will add crusty French bread and red wine and it will be dinner.

Thanks Wales. I was sitting here trying to figure out what's for dinner tonight and it will be French onion soup. Too bad I don't have any homemade beef stock so box stock will have to do sad smiley

Beef with broccoli over rice and egg rolls. I just buy frozen egg rolls. I have made homemade in the past and I don't think they're worth the trouble when so of the frozen ones are so good.

@LJ, my dinner was homemade egg roll. I ate it with homemade cole slaw. Actually it was experimental because I like Jamaican cole slaw and I looked up the recipe online. I ate honey dew slices.

My son loves homemade egg rolls but this time I made the small ones with ground pork, mushrooms and some carrots and water chestnuts, with sweet and sour sauce made of pineapple. He and his girlfriend brought a bundle with them in the car and ate them on their way to a gathering.

He was used to the bigger egg rolls with vegetables and ground pork. The sauce was my specially prepared vinegar with garlic, pepper, green onions and red onions.
Tonight was porcupies (a type of meatball), baked yams, brussels sprouts, eggplant parmesan and blueberry pie.

Tried on some swimming suits last weekend at Kohls, so tonight.....some type of frozen Lean Cuisine.

Diets suck.
Have you ever noticed ..... all you have to do is *think* about a diet...... and you start to get really, really hungry?
Brats with home fermented kraut on top of a pile of collards (Lazy because I just pressure canned up a batch of split pea soup and bone broth that I had to admit to in true/false).

Where are we going... and why are we in a hand basket?
I plan to have a lite dinner at home of marinated steak tips and asparagus and then have a "snack" of a little burger, little fries and drink at 9:45 PM.
tonight will be fried chicken, baked potatos and more brussels sprouts (we love those things!) If I get a chance I'll make an apple cranberry pie too.

Leftovers from the last 3 days, steak, parmesan chicken, cabbage with cheese, cole slaw (someone gave me a fresh cabbage and I halved it). The slaw turned out great.
Scalloped potatoes and ham. Yes, I'm weird. I like them separate.

My dad is recovering from surgery - colon cancer. He is fine as far as getting all the cancer, etc, but I didn't know how the cabbage would go. Isn't cabbage kind of hard on the digestive system? Maybe it would have been OK since it would have been cooked but I thought I would wait a bit on it. He is not supposed to have raw vegetables, and he loves salad. I can't remember if the diet restrictions are for 1 week or 2.

We're having corned beef and cabbage, along with carrots and cabbage, the whole deal. My husband and I met on St. Patrick's Day long ago, and he's half Irish!
