Spatchcocked chicken with garlic, onion, rosemary, lemon and basil. Threw some potatoes and carrots in. Quick and easy during tax season.
Do you find it hard to cut through the chicken to make it flat? I know it's supposed to make the chicken cook faster but I always figured it would take me so long to prepare the chicken that way that it wouldn't save me time...lol

hard salami, a can of corn, a can of green beans (saving the corn and bean water to make pasta later) all cooked then drained to cut back on the hard salami grease.. then added wegman's sauce, cheddar and mozzerela cheese (available at wegmans for $12 for a 5lb bag which is the cheapest deal in town for cheese), a can of sardines with tomato sauce... all together and then cooked until the cheese melted... downed by copious amounts of a smoothie made from blackberries, ice, and diet coke

I am staying with friends in England for a week. Tonight will be homemade fish pie, mixed veg, and an asssortment of sweets to choose from for dessert. And, tea of course. Last night they did a pork roast. Tomorrow night it is my turn to show what an American might do with leftover pork toast. The plan is to slice the meat, add some pineapple and BBQ sauce , warm that up, and serve with sweet potatoes and a green veg.

Skinnytaste's chicken lasagna alfredo. It's made with spinach, roasted red peppers and garlic. Even my kids love it.
A plethora of leftover vegetables from pasta primavera Tuesday night will make a grilled veggie pizza tonight.

I had a rough day today, so for dinner I ate street tacos from B-Dubs and a huge slab of birthday cake from my son's birthday a few days ago.

Dinner, scratch salisbury steaks/mush/onion gravy, mashed pot and my home canned gr beans...

Bfst my BG (blood glucose) was low, so, 1/2 pb toast.

Tomarro, i think the Cap'n Crunch chix baked though, tons of leftover mash. pot's and a carrot souffle I made for my son.

Got a batch of my homemade sesame chicken out of the freezer. Will make rice noodles and spinach in chicken broth to go with that.

Slow cooker fans....do a search for slow cooker sesame chicken. It is soooo easy that it is laughable. I add a few sprinkles of hot pepper flakes to make it more interesting.

Slow cooker is at work today with a corned beef for dinner. Shortly will throw in cabbage and potatoes. Wonderful on a hot day to set up the slow cooker outside on the porch or in the garage so the kitchen doesn't heat up.
