Vegan here, also. We had roasted red potatoes with tomatoes, basil, and garlic, and a Southwestern quinoa salad. Tomorrow will be fresh Thai spring rolls and fried rice. I'm very much looking forward to the ripening of the garden tomatoes so we can indulge in some vegan BLT's (some of the fake bacon is darn good!)
