The only medical shop I've done was a dentist. I've done quite a few phone shops. They have to pay $4 or more for me to do them though. There's quite a few out there for $2 and I won't do them.
A lot of different companies offer telephone shops. I don't know of any that specialize in them. As with any type of mystery shopping, the more companies you register with the more opportunities. You will actually have to go through the process in order to access their job boards. The official list at the bottom of the page is a great place to start. Bestmark, Corporate Research International, Measure Consumer Perspectives, Market Force and Marketing Endeavors are some that offer phone or internet shops. I'm sure there are many more out there.

Telephone shops are almost as varied as on-site shops. It depends on the client and industry. Years ago Market Force had some where all you did was order a pizza and cancel it before getting off the phone and others involve long drawn out conversations for anything from insurance to nursing homes.
