I started out signing up with about 12-15 companies and doing some easy food shops. Then I added more companies (I am registered with 71 now and still adding more when I have time) and did more complicated shops (like apartment and bank shops).
I would start with easy shops first. As you become more comfortable doing them, then I would move on to harder shops. It takes time and dedication to develop your mystery shopping skills, but you will learn over time.

MSPA-A is basically the mystery shopping industry's professional trade association. They have news, helpful resources, and a list of companies you can work for there. If I'm not sure about a company's reputation, then I usually first check to see if they are listed with MSPA-A. It's a good idea to ask questions about anything you're unsure of here as well. There are many experienced mystery shoppers who can help you.
I Secret Shop is just a job board where many different companies post shopping opportunities. It's nice, because you don't have to go to individual company websites. Lots of companies will just post at I-S-S in one place. There are other job boards like this too with many companies, but I-S-S is my favorite and is easy to use.
***Very importantly, NEVER work for a company that asks you to pay them any money first. This is almost always a scam!!! They take your money and will cheat you. Good companies do not request that you give them any money first. If you're ever unsure about a company, ask about it here and people will tell you if it is a legitimate company or not.
Take some time to learn the basics here and ask any questions you might have and then get started with some easy mystery shops first!
