I know that I get a few e-mails a month with shops i the airports, you have to have clearence of a ticket to get past the gates. The only way to find them is to apply to a lot of companies and see who is doing them. I have been mystery shopping for about 9 months and am surprised at the places and things that are mystery shopped. So its just a matter of looking, I now think that if its for sale it is usually shopped.
Being a former airline manager, I can tell you that Major airlines have in-house quality assurance departments. Costs are so high right now, I doubt they would pay for an outside service.

I know that there are some airports that are serviced by a vending company and they shop their employees. I have done some of these that are before security, but I've never done any past security.
i did a shop past security for visa credit card kiosk at the southwest gate. i had to purchase a 100% refundable ticket to pass security. ocne the shop was completed, i went to the desk to be refunded for the ticket. the shop paid $50 plus i got a $20 bonus since they asked me to complete the shop last minute. the company was www.secretshopper.com
