This happens to me sometimes. I simply evaluate every aspect of the station according to the guidelines for every brand, take every picture that might be required, and then sort it out later when I'm entering the report. For example, I will write down everything the clerk said, everything they were wearing, and a complete physical description. I will take a picture of everything that might be out of compliance; get pictures of the building, the canopy from both sides, both sides of every of every ID sign, a gas pump and diesel pump far away and close up, etc.; and note the missing applications, which POP and applications were displayed and where (with pictures), etc. I still have to remember some basic requirements from each brand, such as the inside pictures and both restrooms at Shell stations, but it helps cover the other bases.
