Food Audits

I’ve signed up to do some food audits and need some advice. If I check a sandwich on the warmer or a sausage on the roller grill for their temps do I throw them away? Not sure how to handle this and I don’t want to look dumb going in.

It should be in the guidelines if it's the same ones I do. You would put on gloves, wipe the thermometer with a sani-wipe, poke the thermometer in the food product and then pull it out when done getting the temperature. You would not touch them except with the tip of the thermometer. You do not throw the product away.
The MSC that I did this for provided me with an infra red thermometer. Just aim it at the hot dog and get an instant temperature readout.
Nice! Part of my audit is actually ensuring the location has the thermometer and supplies and then using them.
