Just be honest with them. If you think you will be better soon, you can offer to reschedule the shops for a later date.

I wouldn't stress over it. Make sure you inform each company and don't ask them if or when you can reschedule, give them a date up front. There are shops that are date specific but a huge majority of them are not. Despite the fact that many shoppers and some companies are adamantly "OMG YOU SAID YOU WERE GOING TO DO THIS TODAY IT CAN'T POSSIBLY BE DONE TOMORROW!!!!!" that is actually rarely the case.

Like griff said. And additionally, it's the beginning of the month and many MSCs have their deadlines at the end of the month. Not all, but many do.
Did you check the websites for the companies to see if you can auto-reschedule any? For example, Market Force has a reschedule option so you could put off some of your shops. Some of the companies using Prophet has a reschedule option. I can't think of others offhand. But check to see.
I called a MSC yesterday. Told them (truthfully) there was as major backup on the main highway, most of the alternate routes were affected. They happily rescheduled my shop. I emailed a second MSC, they also happily rescheduled my shop with them.

Yesterday I ran out the door and forgot my package for my PO shop I was going to do after work. I emailed and the scheduler extended to next Friday. You never know until you ask.
You are not doomed. If by some small chance you cannot work for these companies, there are many others. Because there is so much to understand, and figure out with each company, I am happy that I took it slow and only took one job. There are enough quirks in the website to work out that took so much longer than i expected.
If they do not have a time crunch most will work with you to reschedule, winter weather is a big problem for me here in Michigan, and when you are doing gas stations it can be rough.
Depending on the MSC, a reliable one will reschedule, they have nothing to gain by outing you, just don't let it happen too often...
