I was wondering how long you think pricing 500+ items will take you? If anyone has experience with these, I'd love to hear!

Depends on the store. If it's in a Walmart, it's on my ten foot pole list and they would have to be paying $500 before I even considered it. In the pet store I've done a few times, it took me about a few hours since everything is clearly labeled.
It also depends on the method of reporting. Some companies use an app, which is considerably easier, but sometimes pricing 500 items means you have to record the regular price, sale price, and loyalty price, and take photos of the items and price tags/sale signs. Which means you might have to do 5 or more steps for each item. And then there is always the chance the app can malfunction or you run out of battery. Other companies use an Excel sheet where you have to record the price on a hard copy and then transfer when you get home to either an Excel spreadsheet that you email in or in a form on their website.

I do a 50-item audit where I use an app and I have to record 3 prices and take 1-2 photos for each item, plus enter notes if an item doesn't exactly match what's in the app. It takes about an hour to do that. They wanted to pay 12 cents an item and I refused to do it for that price. My price is $25 and the store is about 14 miles from home.

It depends. I do a lot of work as a merchandiser in this particular store so I never get questioned. Management and store employees say hi to me but never ask what I am doing. I suppose if it was a small store where people don't know you it would be more difficult, especially if you are getting a large number of items like 500, which could take hours. Better wear some comfortable shoes, those tile floors are hard on the feet!
What I find time consuming (annoying) is not the products you can find, even if you are entering 3 prices, it is looking for an elusive item or an item they don't carry. I have wasted time searching for "natural" or "organic" items (even toothpaste) that may be in a healthy living section all to themselves or blended with other like items (amongst other toothpaste brands). However, I was never given the chance to do these on a rotational basis, where you could benefit from these lessons learned.

The employees I encountered kept wanting to help me. Ultimately, it may have been their way of seeing what I was doing. Obviously less of a problem at a large retailer and more so at a specialty, lose your whole paycheck kind of store. Also, at a large grocery store, they had an area for dining. I could recharge my phone, get a drink and just take a break. Depending on the number of items, allow yourself to break it up in more than one visit.

That said, I would do it again and I had 750 items. I was entering my information into the Missions app. If I recall correctly, you can enter prices off line, then access wifi later to submit (or sync).
