I had this happen once. I completed a shop at about 11 AM. I was still out on the road when an email arrived about 3 PM saying that the client had canceled all of the shops. I responded, saying that it wasn't fair to cancel a shop after I had completed it, and attached the time-stamped receipt. I ended up getting paid.

I had this experience recently and when contacted the scheduler said I had not completed the quiz. If it is one of those cell phone type shops, you could verify that the quiz was completed, otherwise the shop is cancelled.
That happened with me with Market Force. I did the shop, submitted it, then not even an hour later I received an email stating the client had cancelled the shops. I got paid. Phew.

Best of all worlds... Servimer called me to ask if I had already completed Shop X. The client had just canceled it BUT the MSC would pay me and reimburse my expenses if I had my POV showing that I had been there prior to the call.

Now THAT'S a stand-up MSC.

IPSOS canceled a handful of phone shops just after the report submitted a few years ago. They were all for closed locations that the instructions said I should have received a fee for going to and answering the first set of questions. Some of the closed locations were removed as you describe, others were labeled HOLD PAY and never paid and still, others were paid the 50% fee or whatever it was. I'd write and ask politely what happened.

Had this with Maritz once with a yellow station P3, when it was daylight or darkness shops (not the current structure where it's just darkness eligible). Evidently they mis-entered the location into their system as a daylight shop when it was supposed to be a darkness shop. I had literally just completed the shop and was still in the parking lot in my car, about to leave, when they called and told me, and asked me if I could still do it in darkness. When I told them I had just completed the shop, they told me to just submit it anyway then, and I got paid for my effort even though they probably never used the report.
Having a shop canceled after I did it has only happened to me once. (I've had some canceled before I went to do them, no problem.) I did a Market Force gas shop and when I got home to report it, it was gone. I checked my email and had an email telling me the shop was canceled and I didn't need to do it. The email also said if I had already done it to please contact the Help Desk. I emailed the Help Desk and they sent me an email that they were reinstating it for me to do my report. I logged in and it was back. I reported and was paid.
I had a shop assigned 100 miles from home. Left home 7 AM, completed at 9:30 AM -- they cancelled it at 11 AM. No pay.

I am learning that if you reach out to the schedulers and explain your situation, 9 times out of 10 they can help you out. That 1 time they can't, I could probably guess who you were contracted with!
Best Mark has done that to me twice out of the 4 shops I have completed for them. They paid me for one and not the other. Interestingly they only cancelled the shops where I gave a poor rating to the business I was calling as the salesperson blew me off on the phone. It was as if they did not want a truthful report. I know they are a popular company but they have been shady in my experience.
