Ground Turkey, mushrooms, red peppers over spinach pasta....made an o.k. coconut flour muffin with chucks of dark chocolate. I can no longer have nuts...miss them...sad smiley

Doing a casino-related hotel with in-room dining tonight. So, who knows?
ETA This turned out to be a large, tender steak, steamed green beans and mashed red potatoes. I went $4 over reimbursement and am glad that I did. Enough leftovers are in the refrigerator for me to take home for a second nice dinner. (Never leave home without a cooler and your own wine supply, lol)

Sauteed Chicken fajita strips with onions and mushrooms, corn on cob and baked beans.
There is a small pork roast in the slow cooker. That will become pulled pork, teamed with baked beans and baked sweet potato. How nice to be able to have a frsh, homemade meal during EOM madness!

Cheese stuffed crepes (as in manicotti) with a tomato, meat and mushroom sauce, garlic bread, red wine. Ahhh, a whole day without having to even leave the house. An evening of recorded films. It is almost wine-thirty here.

My huge basil plants were beckoning today. The result was farfalle with pesto, tomatoes and pine nuts topped with a grilled chicken breast.

Watching Food Network brought this to my dinner table.....sweet potato cut in thick slices, drizzled with olive oil and cinnamon, baked until soft, then topped with soft Goat cheese and honey and a shrimp salad.

My hotel shop does not include dinner. So I am taking an in-room picnic: a salad of chopped artichoke hearts and olives, pita, garlic hummus, cantaloupe, wine.

I made a big pork butt roast, we can get get 4 meals out of it. Pulled pork tacos, bbq pulled pork on bread or buns, sauteed pork with veges, and pork enchiladas, the list goes on. Freeze some so the meals can be spaced out.
