I bought fresh salmon and cooked it in a fry pan >>> which I will never do again. I will bake it in the oven next time. I had mashed potatoes and fresh asparagus which were very good.

I have chicken in the crock pot to make chicken salad later.

I don't have any celery. I am going to give it a Mediterranean twist by adding kalamata olives and chick peas.

How does a person run out of celery?

Of course it wouldn't work in chicken salad, but I usually buy an extra bunch of celery, chop it, and put it in the freezer to use for cooking. That insures it's there when I need it.

Stir fry on rice this time. I don't like the noodles, they are too starchy.
DH discovered sayweee.com, and they deliver right to the door. He had about 50 pounds of food delivered when I was out of town. Ugh ridiculous. I think he needs to make spring rolls too now.

Yum! I have eaten a lifetime worth of brown quinoa, so rice sounds delicious.
Hubby is having oral surgery today, so I made potato and cabbage dish cooked in corned beef broth. It started out to be soup bu is quite thick; will probably blend some or all of it to make it resemble colcannon.

Lentil/ham salad made with the quarter of a ham steak I found in the freezer, onion, jicama (because I didn't have celery), brown lentils, spicy mustard, and a tiny bit of mayo. Will serve on a bed of shredded cabbage.

I use onions/shallots, carrots and celery in my chicken salads because I always have them on hand. That's why I don't understand how I ran out of celery.

I ended up using green bell peppers instead. (confused face emoji)

I keep almonds and other nuts in my freezer. I also keep water chestnuts, canned, in my pantry. Either would work as a substitute crunch factor for celery.
Got it, I don’t use both celery or onions. For me it’s one or other depending on what’s in the fridge. I guess you do mirepoix chicken salad.
Hmmm....haven't seen a coworker lately. Must check Mert's freezer.

Hubby picked up carryout Chinese. I came home from volunteering hungry and dehydrated. Wolfed my dinner down; 30 minutes later I had a headache I'm assuming came from MSG.

Homemade spring rolls.
Had a drink with my son at a restaurant. First time in over a year. I've ruined him. He orders $16 craft cocktails every time. I got an Angel's Envy rye. He had a Hendricks gin smash.
I made a large smoothie with organic almond milk, greek yogurt, banana and a whole mango!! It made up for the pint of Ben and Jerry's new flavor "Thick mint" ice cream I ate... well kinda. smiling smiley
