Cilantro (from my garden!) Lime jasmine rice, grilled chicken and roasted Brussels sprouts
I ate something! Three whole bites! More important, I found the grouped ingredients for the kale soup from a few days ago (before I was so rudely interrupted by a health thing). Hmm. Will investigate that tomorrow.

Finished yesterday's chicken salad. Now that we have a working oven again, we can branch out from the one-pot, stove top meals and make something else.

Tonight I pureed the second half of yesterday's black beans and turned them into soup, then added roasted sweet potato and red cabbage.

For the first time in years I had Papa Johns pizza. I had gotten completely burned out on it, but tonight it tasted really good.

Ziti pasta salad with fresh cauliflower, zucchini, carrots, broccoli, home made dressing, red onion, mozzarella cheese and basil. Grilled eggplant, Impossible burgers. I drank a can of some kind of lime and tequilla. Bananas and strawberries. I need to shower and take a nap.
Baked farro with tomatoes and parmesan cheese and some sliced pork tenderloin on the side.
Lighter fare tonight. Grilled eggplant topped with fresh mozzarella, basil and chopped tomatoes. Lightly buttered baguette bread with garlic. Later we shall have kiwi, bananas and chocolate. Can't wait to watch 'Better Call Saul' tonight. Anyone watch 'Breaking Bad?'
Don't know. I do not feel like prepping and cooking anything. Hot as heck outside although it's low humidity, YAY. My neighbor's huge bottle gourd/squash is sitting on my kitchen counter. I am overwhelmed by its size. The recipes I googled call for curry which none of us like. Aside from steaming, anyone have ideas?

Veal scallopini with mushrooms and capers. Tomatoes and cucumbers with an avocado/sour cream dressing.
A couple of days ago I poached 4 very large chicken thighs. So, tonight I am trying a new (to me) way of using some of the chicken: Chicken and spinach Alfredo. I have sauteed a lot of baby spinach in garlic and a little olive oil. I will use bottled Alfredo sauce from my cupboard stock and whatever pasta I grab first. I might use some French bread to make garlic bread for mopping up. (When I buy a French baguette I cut it into usefully small pieces and freeze those.)

Tomorrow I will smoke some salmon and then I will have 2 sorts of suppers stocked up and can alternate them with very little of no cooking. Cold home-smoked salmon, store-bought potato salad, and broccoli with become the other supper plan.

Walesmaven, curious if you make a sauce for the poached chicken. I also do poached chicken as no oil is necessary, but find I need to add something to it to make it have some taste. I only have one sauce in my repertoire and would love another new idea. Thanks.
Well, first, what sorts of herbs/aromatics are you addition to the poaching liquid? That can make a BIG difference.

I tend to used poached chicken cold, sliced for sandwiches or as an entree. Also, shredded in soups. However, I just used bottled Alfredo sauce plus spinach and mushrooms with chopped poached chicken and then added cooked pasta. When I reheat this tonight I will add more garlic, but otherwise it was very good.

A good hot weather supper for me is sliced cold chicken, sliced tomato and cucumber, and redskin potato salad.

Oh so that's it. I do not add anything to the poaching liquid. I dip my poached chicken in a scallion ginger garlic sauce. Can you tell me what herbs / aromatics you use? I will give that a try next time. Thanks.
Here a recipe, followed by what I actually do.
Place 1-4 boneless, skinless chicken breasts of up to 6 thighs into a pot
NOTE: thighs will provide a more flavorful result.
DO NOT add salt to the poaching liquid to avoid making the chicken tough.

Sprinkle the meat with several aromatics such as: smashed garlic, bay leaf, 1 tsp black peppercorns, sliced ginger, fresh or dried herbs, thinly sliced onions.
Cover the chicken with water.
Bring to a boil over medium-high heat.
Reduce to a simmer. cover and cook. Starting at 10 to 14 minutes, check with a meat thermometer. When it registers 165F in the thickest part of the chicken, it is done.
Remove from the poaching liquid to a plate to cool. Transfer to an airtight container and refrigerate.

I tend to use dried herbs and avoid strong ones like ginger in the poaching process. I may use the following combination: peppercorns, ONE bay leaf, garlic, a small amount of poultry seasoning, dried parsley, dried clery flakes,.

Fave fast food salad. There was a power outage and we cold not access enough food and beverage while leaving 'fridge and freezer closed. So, we had this treat. Even better, during the outage I was able to accomplish quite a few tasks and walk for thirty five minutes (in small spurts). It was good.

Thanks walesmaven. I will try this. Maybe then I won't need to prepare a dipping sauce with your method.
