Tonight I'm having my son and his girlfriend over. I will serve flour tortilla's with salsa, lime crème, shredded lettuce, beef, (my son doesn't want me to use ground turkey) guacamole, (homemade), sides of melted cheese with tostados. At 6:30 PM the Kentucky Derby! Not sure if I should have Margaretta's or Mint Julips. Desert Strawberry shortcake.

I do too, and homemade is the best, secret ingredient (red potato), thickens soup, was so good and I just read, good for you...

yes, beets are very very healthy - I eat that soup cold or hot and love pickled beets too.
I am headed for the Atlanta airport to fly home and wondering just what it was that I made sure to freeze so that I could have a nice, homemade supper on my return. Four days on IMSC conference were INTENSE, and evryone seems to be exhausted. So, I am hoping that I froze just the right thing for my supper.

Spatchcocked chilcken on a bed of onions. herbs, mushrooms and garlic cooked in the oven.
Steak strips fried with onions, mushrooms and peppers....red potato and cauliflower mashed potato's.

Tonight is pizza night: thin crust, pepperoni, sausage and mushrooms, with a little red wine.

Last night i did a bar audit and my appetizer which the bartender insisted I try (new item), was fried cauliflower, a bit spicy and one of the best things I'd had in a long time...tasted like chicken, little balls of friend...yumo.

Ground beef with pasta, herbs and cheeses, a homemade hamburger helper, green beans, corn on the cob. Love all the seasonal produce.
Saturday I get to try a new shop, "scratch cooking". I haven't seen this shop before (done the roadhouse and apple ones).My husband and I are looking forward to the meal, even with the "essay" afterward. Neither of us has eaten there before.

Tonight will pick up large shrimp on sale, saute in olive oil, garlic and lemon and have over cauliflower rice I bought at Trader Joes, will add green peas for my veggie. smoothie, yogurt and berries later.

While my vehicle was parked (for a shop) I shopped a restaurant 1 block away and brought home great leftovers: cheese enchiladas, charro beans. Will combine with some of my homemade chili for supper and add some guacamole and chips.

Ham, bacon, and cheese sliders cooked in a light sauce, mashed potatoes, and corn on the cob.
London Broil I just picked up for 2.88, nice and thick, sauted mushrooms, baked potato, avocado and tomato's.

Bought some of Oprah's Cauliflower/potato mashed potato's and they are great, having (again) with broiled chicken breast and peas.

Tonight I have hambugar I want to use up so some kind of hambugar cassrole , carrots and brownies for dessert
Ham, pasta and cheese casserole, spinach, ice cream.Been too busy with shops lately to get creative in the kitchen.
I tried the Cauliflower pizza crust. Not for me! If I'm going to eat pizza I want a real pizza.
