JULY 4TH WEEKEND

What's everybody planning for the Big 4th weekend and the Big Day? BBQs, picnics, will you travel, will you work? Will you mystery shop?

I have dinner shops every night for the 1st-6th, even the night of the 4th, but I haven't scheduled anything else. I'm planning a BBQ on Tuesday the 4th during the day. I'm off on Monday, and my brother is coming this weekend to spend the weekend through the 5th with me. We'll probably watch fireworks and howl at the moon.

Howling at the moon was not on my agenda, until nowwinking smiley

SandyF was nice enough to invite me to her 4th party and watch the fireworks, I believe from the Hollywood Bowl, but I'm not up to the drive home....so pool time with neighbors, good dinner and just hanging out.

I am working and playing. smiling smiley

So far it's a quiet weekend for me. Tomorrow there are a list of "honeydews" to complete. Sunday morning we have a volunteer commitment. Hubby chose not to take the day off on Monday. On the Fourth we will walk to our municipal park for fireworks.

With Congress in recess, traffic will be very light in the city. Sooo, I have a ton of garages that permit weekend shops for today and Sunday, others that will be open on Monday. Will write report and drink iced tea on the 4th.

Poor customer service? Don't get mad; get video.
I'm not doing routes until after the holidays, and my dogs and cats are afraid of fireworks. I typically spend a holiday soothing them for hours on end.

Oh we're gonna have to have a discussion about this.

BBQ is not something you do. it's not an event. It's not a sauce.
BBQ is smoked meat, usually beef, and some purists even suggest that only ribs are BBQ.

It's obvious you're not from the south. winking smiley

Beef? Pork rules.

Perhaps but it's still not an event you host!

These are definitions listed in addition to the actual food.

Oxford dictionary: A meal or gathering at which meat, fish, or other food is cooked out of doors on a rack over an open fire or on a special appliance.
‘in the evening there was a barbecue’

Dictionary.com: a meal, usually in the open air and often as a political or social gathering, at which meats are roasted over an open hearth or pit.

In all seriousness, from Wikipedia:

Barbecue or barbeque (informally BBQ or barby/barbies) is both a cooking method and an apparatus. Barbecuing is done slowly over low, indirect heat and the food is flavored by the smoking process, while grilling, a related process, is generally done quickly over moderate-to-high direct heat that produces little smoke.

What most people do is grilling, not BBQ.

Good BBQ is not exclusive to the south. Kansas City, Missouri tops a lot of lists. And the next time you are at the butcher, ask him to tell you the best cut of pork ribs to BBQwinking smiley

I always give KC props and have had some of the best there. Honestly though, St. Louis has some great BBQ joints and our styles are the same. A right of passage for any backyard barbecuer in STL is mastering the pork steaksmiling smiley

Yeah I don't know much about pork steak. Everybody has heard of St. Louis style ribs, though. We did a lot of pork shoulder and babybacks where I came from.
My understanding is pork steak is, or at least was, unique to this region. It is a tough cut so it needs the low and slow cooking. Steaks are cut from the Boston Butt. The Boston Butt is actually the shoulder. Go figuresmiling smiley

Yes, I knew that about the Boston Butt being a shoulder. We were just talking about that a couple of days ago. Didn't know about the pork steak.
Texas is its own country. We BBQ everything and anything. Did you see Fried Green Tomatoes? "Secret's in the Sauce....."
Back when I was still a meat eater, I would do pork steak on the grill but in a pan. Just pour a beer over it and cook until it's all gone. Amazing taste.
Talking about Pork (which I don't eat), in Vegas one time, i went to Bobby Flay's "Mesa Grill" in Caesars Palace Hotel, and his signature dish was a huge Pork chop, yes, I ate the whole thing. Ribs, they all taste good to me, which means I haven't yet had the best.

So do you or don't you eat pork? Or is this one of those, what happens in Vegas stays in Vegas things?

Lets say I don't buy or cook it, but when in Vegas, anything goes and now everyone knows!!

Worked in the am, had pool time at my sis' house in the afternoon and I didn't have to cook this time. Lots of fun!
