Dish for a pot luck

I KNOW someone here will have a good idea for me. I've racked my brains and can't come up with anything :-)

I'm going to a meeting/potluck lunch this weekend. I'm looking for a dish that I can take that doesn't need any special attention.

The venue is two hours away. There are several people carpooling, so storage space in the car will be at a premium. I assume there will be a refrigerator available to keep things cold.

How about a salad of cut up cantaloupe, watermelon, honeydew and a few strawberries and/or blueberries. No dressing required. Goes with anything. Chill it all well and then place it in an insulated container with one of those freezer blocks. No need for a dressing; nothing to reheat; leftovers very unlikely.

I just made an orange/scallion salad.....lettuce, orange slices, green onions... dressing, olive oil, orange juice, garlic....very refreshing and light.

Buffalo Chicken dip. You need a 1.5 quart small crockpot, and if you don't already have one they are only about $10 or so. The dish is super easy to prepare. My cousin does it for family gatherings. She uses Buffalo Wing Sauce, cream cheese, and a large can of chicken (maybe 2 cans, not sure). It's pretty tasty. If you have time I think boiling some skinless boneless chicken breasts and dicing/shredding it is tastier, but hers comes out pretty good and it's easy. Then a couple of bags of Tostito's Scoops tortilla chips, and voila!
I always take raw vegetables and dip. I have a round covered server with a top that has 6 sections around and one in the center for the dip. I pick up packages of already-cut up vegetables at the grocery store and ranch dip. All I have to do is put the veggies in the server and take it like that. Very easy and usually gets all eaten up.
Can you buy something, such as the fruit or veggie platter, at a store near the venue? This would save space in the car for most of the travel time, and you could use the container as serving dish. There would be no need to bring anything back with you in the car.

My mom usually makes a simple layered fruit salad with raspberries, blueberries, cut up strawberries, and a sprig of mint on top. Maybe a little glaze of orange juice mixed with honey to drizzle over. It looks really pretty in a bowl that shows the layers.

Also, depending on the food options, a few loaves of french/italian bread can be sliced almost all the way through, then stick a little slice of butter and a bit of minced garlic between them, wrap them in tin foil, and pop them in the oven when you get there.

Another pretty simple option is a pasta salad; cook some penne pasta, half some olives and cherry tomatoes, add some Parmesan, pour some salad dressing (Italian is a good option) you like all over it, then stick it in a gallon plastic bag and bring a big bowl along to dump it in. That one is pretty cheap as well and real yummy if there's leftovers.
How about some fresh grapes or whole strawberries? If you buy fruit at the club warehouse, you can get them in a boxed plastic container. Just rinse them off, make sure there isn't alot of water left on the strawberries, put them back in plastic container so you don't have to worry about bringing back your containers. I would rinse out the plastic containers that the fruit came in too.
How about Meatballs and Sauce, cooked and transported in a crockpot; Layered Salad, Loaded AuGratin Potatoes; Baked Ziti; Fruit and Cheese Platter; Crab Dip or Hummus with crudites; Brownies, or Chicken Salad with grapes and almonds?
Thanks, everyone, for all the great ideas. My shop reports today took longer than anticipated and I ran out of time to cook anything. My contribution will be a big bowl of grapes (on sale at Aldi this week), cut into small bunches for easy serving.

KathyG- to add to your grapes-Make a dip out of vanilla yogurt and fresh squeezed lemon juice. Easy to make when you get there. Have the yogurt in a throw away bowl, cut lemon and add in when you get there.
My friends love when I serve humus, which I make fresh, or you can purchase, slice in half the bag of small colored peppers. (red, yellow, orange, the size of your thumb.)
I also used to do a cous-cous salad. Would make the cous-cous ahead of time. Add dried cranberries, unsalted cashews, sliced fresh green onions, thawed frozen green peas or corn, canned black beans drained with whatever items might be good in the salad and Paul Newman's asian salad dressing. I didn't have to worry about spoilage since none of ingredients needed it.
Romaine, Shredded chicken, black beans, avocado, red peppers, red onion, dressing of your choice, my fav is: juice from black beans, best food mayo mixed with sour creme and crushed taco chips on top.

Wow..you all must love your coworkers...mine are okay but no way I'm spending 2 hours in the kitchen prepping and cooking for them for a potluck..I'm usually lazy and just bring a couple 12 pack of sodas or chips or fruit or veggie platter or store bought cookies..

That made me think of this recipe. Super easy and it looks impressive. As written it can be a bit bland so I've added different seasonings and things like shallots and/or diced, roasted red pepper.

This dish is delicious. I make it in my crock pot and add kale. Instead of corn, I use dried cranberries.
