No recipes here. Only this: early on in the pandemic, we stocked up on emergency rations such as canned beans, canned meats, and canned veggies. Now, we can still get our preferred foods and are making up little food adventures to use up the emergency rations. It is possible to donate those to a food pantry, but the hubby situation makes it advisable to use them here.

I would hang onto them because winter has not come around yet and there just might be another shut down only worse this time. All depends on how the Covid-19 hangs in at the current level or gets worse.

Today I cooked up some Ramen noodles and added two well-beaten eggs that had been salt and peppered. Added the eggs about a minute before taking off of the burner. Poured into a strainer and let it cool off a bit then ate it with gusto.
Back in the spring I was looking for something to take on a picnic, and stumbled on the recipe for Smashed White Bean Salad Sandwiches on The Splendid Table website. It's turned into my go-to for a fast, quick, and cheap meal. Because I can never leave a recipe alone each time I make it I add slightly different ingredients.

Tonight was clear the refrig to get the garbage to the curb. Leftover chicken got chopped into small bite size pieces, the broccoli florets got picked through and rinsed, ramen noodles, green onions and a little pad thai sauce mixed with a little hoisin and soy sauce. Nice combo, quick and the refrig is now clean and ready for a restock run.
Homemade Rotisserie Chicken in the Oven

This omits all of the sugar and chemicals pumped into the grocery store-made rotisserie chicken and can be customized to your tastes with the rub.
The key to this is SLOW roasting with the chicken places breast down on a roasting rack.

Ingredients:
1 3-5 lb whole chicken, with giblets removed
1 cup of water
2 TBS Canola oil or melted butter/margarine
There are so many enticing recipes for the rub! So make a search and select what suits you. A favorite rub recipe gleaned from your searches for "rotisserie chick in the oven recipes."

Instructions:
Preheat oven to 300 F
Pour the water into the roasting pan

Brush the bird all over with oil or butter
First pat and then gently rub the seasoning mix ALL over the outside of the chicken.

Be sure to use a roasting rack to keep the bird above the drippings.

Roast for 2.5- 3 hours at 300 F.

Check the internal temperature with an instant read thermometer. When that shows that it is "done" remove from oven and completely cover with foil for 20-30 minutes while the juices "settle" before carving.

Reserve the bones, plus those giblets to freeze for making broth in future.

I made this last evening and it was wonderful in taste and moisture.

Here is my favorite dump cake recipe. So quick and easy. One box yellow cake mix, any brand, can of caramel apple pie filling, can of cherry pie filling, and 1/2 cup of butter. Pour the pie fillings in 9x13 pan. Sprinkle cake mix on top. Dot with butter. Bake at 350 45 min to an 1 hour until golden on top.
That sounds wonderful! I do the same thing, but substitute a can of crushed pineapple for the apples.

EASY Tomato Soup: 4T butter 1 Onion cubed, I large can tomatoes and the juice. It said to cook for about 40 minutes.but I just dumped it all in the crock pot. Once the onions are done (soft) use the immersion blender or use regular blender until smooth. This only made two large servings, but could easily be doubled. Delicious.
The wife wanted to try the spam and eggs. It was good she cut the spam up into little cubes and then poured six eggs scrambled with salt and pepper (should have left the salt out of the eggs.) It was good really good but I did pay for it an hour or so later. My heart started racing at 115 beats per minute because of all of the salt.
The lower sodium Spam is great, and also do not salt the eggs until you have tasted the final product, lol.
I like to slice and fry spam to a golden brown, drain on paper towels and then freeze meal-sized portions and later pop them into the oven or a pan to reheat when making breakfast. (Or dice and add to eggs, of course.)

Did not have Spam, but had leftover boiled boneless chicken thighs. I tore the chicken into pieces, added it to mashed potatoes, and added lots of garlic and cracked pepper. Easy. Yummy. Repeatable.

Does anyone have recipes for fresh cauliflower? I don't like cheese due to diverticulosis. I was thinking of boiling it and then adding butter and half/half like mashed taters. It is going with roast Shadybrook turkey!! smiling smiley
Steam it until tender-crisp. Add butter, serve.

I think I'll put cauliflower in with turkey along with carrots, scallions and potatoes. Sounds easy and healthy. smiling smiley
Well, my friend and I had lunch at Panera Bread this past week, and I decided to try their Autumn Squash Soup. OMG....it was DELICIOUS!!! For any of you that enjoy soup, try this "copycat" recipe I found online. I made this myself last night....using the apple juice, as I did not have any apple cider. I also used the prepped and chopped butternut squash you can find at the grocery store. I did add more brown sugar, I added a total of 1/4 cup of brown sugar, and did add in about 1/2-3/4 cup of heavy cream. I also added a pinch or two of cayenne and a few shakes of black pepper. YUM YUM!! Here's the link to the soup...hope some of you try it and enjoy it!!

homemade bbq rub
1 T smoked paprika, 2 ts brown sugar, 1 ts celery salt, 1 ts garlic powder, 1 ts dry mustard, 1/2 ts black pepper and 1 1/2 ts kosher salt

We are still in pretty much isolation, having dinner a couple of nights a week at my son's house and them being at my house a couple of nights a week. We all like a little something sweet for dessert, and bundt cakes have become my 'go to' for a quick dessert to take along. They require no icing so are lower in calories and look 'finished' with a quick dusting of confectioner's sugar.

1 pkg cake mix (15.25 oz) your choice of flavor
1 pkg instant pudding (4 serving size, any flavor, I use sugar free mostly)
1 c water
1/2 c applesauce or oil
3 eggs
1 c mix-ins of your choice (optional--chocolate chips, nuts, gum drops, toasted coconut etc)

Preheat oven to 350F, grease & flour 10" bundt pan (I use Baker's spray)
Dump everything except mix-ins into a mixing bowl and stir until combined. (I use a hand held mixer to just get it a uniform batter.) Stir in mix-ins and pour into bundt pan, leveling with your spatula as needed. Tap the pan on the counter a couple of times to release any air bubbles and bake for 40-45 minutes.;

Use the toothpick test for doneness and let the cake cool for 10 minutes before trying to get it out of the pan. I usually 'bounce' the pan a few times to make sure the edges are loose before inverting it over a cake rack to detach from the pan.

Combos I especially enjoy: Spice cake with 'spice drop' gum drops; chocolate with chocolate and peanut butter chips; pineapple with a can of crushed pineapple dumped into the blender to puree and then add enough water to make 1 1/2 c to cover the water + oil requirement.
