Grilled Cheese Sandwiches

Several of you posted some appetizing-sounding suggestions for varieties of cheese and other "add-ins" for grilled cheese sandwiches. I thought it would be great to have them all together in one thread. Mind you, I plan to steal your ideas shamelessly!

I loooove grilled cheese. It's great with bacon. Not a creative idea but a classic.

I put mayo on the outside of the bread. Someone recommended using bacon grease instead. I am going to try that next.

Smoked gouda and white cheddar.

When you add turkey and/or bacon or other meat, it's not a grilled cheese anymore, it's a melt.
JAS, were you serious when you said bleu cheese and feta in another thread? I can't picture those flavors.

No, I hate Bleu cheese. And feta doesn't melt well, so while I love it on salads, I can't think of how it would be on a grilled cheese, other than disappointing, LOL.
Yeah, those cheeses I think of as going on salads.

My husband likes Bleu cheese and I make him homemade salad dressing and also a Bleu cheese/horseradish sauce for his filet mignon. I think it's disgusting!
Dont care. Its a grilled cheese in my world lol.

I am not knocking a melt, lord knows I LOVE them. But, it's like saying you are wearing pants when you are wearing a long skirt. It covers the same areas mostly but it isn't the same thing.
Sharp cheddar, tart apples, bacon, grainy mustard grilled on thick cut sourdough.

Call it a melt or call it grilled cheese, it's delicious.
I bought bleu cheese for a recipe. It melded with the recipe, but I couldn't find another use for it.

A lot of people like bleu cheese, roquefort, gorgonzola...it's too strong and funky for me. And when blue or green stuff starts growing on food I toss it out, lol.

I am sure you could google and find a use for it to get rid of it if you don't mind the flavor. My neighbor puts it in her homemade macaroni and cheese.
Smash vs Non-Smashed bread? I lived most of my life thinking that you had to squish the bread (probably just bad parents!), then realized after working in a restaurant....I can do that at home, just don't smash the bread
It's about texture. i prefer non smashed but I like to use a fine grain white bread that toasts up nicely.
I like a hearty, whole or multi grain bread.

I make my mother's depression grilled cheese. Open faced, place some baked beans, cheddar cheese and bacon on top of the bread and toast in the oven. I just had them tonight n
That sounds similar to SOS, which varies from region to region. My mom made it with tuna, cream of mushroom soup, and peas open faced over toast. My husband' mother made creamed chipped beef open faced over toast. I am sure that there are other variations.
Slice of tomatoe in between two slices of cheese i prefer whole grain or wheat.Putting the tomatoe between the cheese keeps it from getting soggy.
Smashed bread, toasted, has an entirely different texture. White, wheat, rye, multi-grain. I use a rolling pin to smash a slice. Put it in the toaster, or butter and grill it. Yum.

You know the sliced Italian they sell in the bakery at Walmart? It's great for grilled cheese sandwiches.
Done and delicious!

Last night, I used a "4-Cheese Mexican Blend" shredded cheese, drizzled with a bit of avocado ranch dressing. Lightly buttered the inside of the bread, and applied a very thin film of the ranch to the outside. It was so good!
