Grilled Cheese Sandwiches

I am obsessed with cheese and we have a great cheese shop that is thankfully still open. I just wish that we could go there like we did all the time for mac and cheese Friday, but I digress. I love their brie cheese, blueberry jam and ham grilled cheese..you can also substitute turkey. They also have a munster, fire roasted tomato and bacon jam sammich that I absolutely adore.
I am on the mayo on the outside camp, though. It gives it an amazing crispy crunch on the outside, especially if you use homemade mayo, which I almost always do.

I have a puff pastry sheets I have been wanting to use, I have port wine and some crimini mushrooms. I think I will do a baked brie.
Mert, I like to buy my brie in the small wheels and I put it in a mini cast iron or terra cotta pan with some slivered almonds like my Mom used to make and we would eat the whole thing with some stone ground wheat crackers. (OH, the memories). If you have a wedge, you can do it, too, but it's so much prettier with the whole wheel. You can also put it in a small round loaf of bread and it is so darn good. Brie is one of my favorite cheeses ever.

When I lived in LA I got a Comte cheese from Trader Joe's. It was so good! It was a hard cheese with a nutty flavor. I got it from a store here but it didn't taste the same.
