Tonight was "I'm uninspired and not real thrilled with spending much time in the kitchen." I pulled chicken breast out of the freezer to thaw, cut up in rough cubes and brown. I picked up a can of soup off the shelf with my eyes closed and ended up with a chicken with vegetables. Wanted a little more vegetable than that so picked up a can of diced tomatoes. With the chicken browned, everything was dumped into the pot, leftover vegetable broth in the fridge was added. A taste showed plenty of salt but it needed fresh ground pepper and granulated garlic. When it came to a nice boil it was time to add all the remnant pastas around (you know, that little portion in the bottom of the boxes that is too little to do anything with). There probably was a cup to a cup and a half total of dry pastas that went in including whole wheat, multi color and plain rotini, some elbows and a few rigitoni. Put a lid on it, turn it down and come back later.

The moisture all got absorbed into the pasta, some of which was al dente but some was beginning to mush. Spoon it out and top with fresh grated parmesan and voila, dinner complete with some veggies in it. I probably will never have the same combination of ingredients again, but it was quite tasty for a virtually no work dinner.
I was at Trader Joes the other day, and they had a great sample with an amazing spice on top. They have it available this time of year only, the spice is called "Flower pepper", black pepper made with special eating flowers. This was so good, I bought one and use it on everything, great on salads, which I will be having tomorrow night using three different greens, many veggies and I now add a chopped apple, liking fruit in salad after trying it on a shop. Making my own light dressing, greek yogart, tbsp. light Best Foods mayo, tbsp. concentrated orange juice, ginger and fresh lemon and garlic.

What do you want for dinner tonight, honey? I dunno, how about you? Too often, those nights could end up with cold sandwiches or popcorn for dinner.

Several months ago, my husband inventoried the vast land in the freezer and made a spread sheet. Now, it is much simpler, based on the first in, first out basis. Now, we look at the inventory, and all is clear. Tonight, we're having pork chops. Next up is chicken leg quarterssmiling smiley
When we got a new little chest freezer I made up an inventory as I moved stuff into it. The first in/first out (mostly) list was on the refrigerator door with those nights there were shop dinners identified and with as much variation as possible (pork/chicken/beef/mixed). It didn't take long before a glance at the list showing chicken brought about a suggestion we go out for burgers on our own dime . . .
My list is in my head depending on what mood I'm in while I'm having my morning coffee. Today I'll take chicken breast out of freezer and make whatever veggie comes to mind, or pop into Valley Produce where fruits and veggies are so low, I can buy something different daily. I read through their Tuesday flyer, and picked up 3 pds. of plums for a buck, 4 pds of banana's for .25 (I dip in hard chocolate and freeze), great late night snack. You get the picture. Living alone, it's all about what I want, couple days ago Ralphs had a huge sale on salmon. I spend more lately doing TS grocery stores, as I'm tempted to buy more than I would normally....9.00 doesn't go far in a supermarket, I can buy 3 times more groceries in Sprouts farmers market or Valley Produce...we're lucky to have a great mexican store where prices are low as well. I stopped doing TS grocery stores, those reports pay so low, just don't feel it worth the work.

Have never tried to make pizza....changed plans and making my skinless chicken breasts on top of brown rice, mixed with broth, peas, raisens, cooking now and smells good, a small salad along side, no dessert.

Making a very authentic cottage pie, including rutabega, parsnip, carrot, celery, onion, thyme, basil, lamb, etc. If I am not ambitious enough to make the mashed potatoes today, I will let the cooked meat, herbs and veggies "mature" in the frige and assemble the whole thing for tomorrow night.

Tonight will be a super simple supper because I'm writing up long reports. There is a pork tenderloin that has been wiped down with garlic and is marinading in the garlic and fresh herbs from my garden. It will be wrapped in bacon and roasted. Sides will be frozen brussel sprouts and a packaged rice side just to keep things quick and simple. 5 minutes prep time earlier in the day, 10 minutes more in the kitchen later total to get dinner on the table. Foil under the roast so even cleanup will be little more than a quick wash of two pots and putting plates in the dishwasher.

Grilled ham and cheese on rye, cups of vegetable barley soup from the freezer. Coconut cake for dessert.
Tonight was a CORE dinner (Clean Out Refrigerator of Everything). It was dinner plates of 'miscellaneous other' from cheeses, leftover pasta, leftover veggies, a little pork tenderloin, a little pizza, the last of the dill pickle jar, etc. Tomorrow I run a route of grocery shops to restock, but tonight was serve it or toss it night. In the morning I will wash out the refrigerator. Nothing left but condiments and unopened cheese
Ah! That's what's known as a "festival of Leftovers" in my family!

Ours was soup. If it fit into a soup catagory it went into the pot. Sure made a good soup.
Did a Smart and final and picked up a great New York steak on sale for $4.44pd. Making a big salad and baked a banana cake.

My husband's famous oven-fried chicken. He uses real butter, there's nothing healthy about it, but once a month or so, it is my favorite. He also made fresh green beans with new potatoes.

Tonight is pork chops on the BBQ and maybe some Trader Joe's sweet potato fries. Unusual and crappy night in that I got home later than planned and have no less than 3 reports due tonight. I never take jobs with reports due the same day, what the hell was I thinking!

Leftovers tonight, did CA Pizza Kitchen and brought home salad and pizza. Took 2 1/2 hours to get home at rush hour, still exhasted, never again.

Dinner shop at a barbecue joint tonight. Leftovers ~ brought home everything except dessert. Barbecued ribs, cole slaw, potato salad, collard greens and jalapeno corn bread. I saved room, and we at all the dessert which was warm apple bread pudding with ice cream and whiskey sauce.
Cettie... If you need help... Um...disposing of leftovers... Im hear...

Dad took me out to hooks catfish kitchen on 5th and peach... A little high $10.50 for two pieces of catfish and fries with a can of soda but it was good and filling... Breading was really good...

Dinner was cicis... Cant go wrong there..

Duringe the week I will be making salmon salad for my lunch... 15 oz can of salmon, 4 hard boiled egg whites, can of peas, mayo... One tom sized lunch

Canned salmon seems to be gone from dollar general... Sad $2 a can... You gett probably 12 oz of fish and a lot less mercury but similiar taste than tuna...had to go through amazon...
