Bean soup is an easy one, Lucky.
Get a big pan and pour in beans and a lot of water. You can use pintos, navy or whatever you like. Let the beans soak over night. Rinse and remove any beans that look bad. Put the beans back in the pot and put in more water. The beans are going to cook for about three hours or more so make sure to add enough water. I had a piece of country ham but you can use city ham or bacon. I had a product called "Better than Bouillion" and in Atlanta I could get "Ham Base" (I can't find ham base in Louisville)
. It tasted like the best seasoned beans ever but added no fat to the beans so they were much healthier. It was good in green beans also. Anyway, back to the soup. Put the ham in the pot with the beans. You get the water boiling an then turn down the heat and make sure to watch the pot often enough to not burn on bottom of pan. From personal experience, little black crunchies are not supposed to be in the soup. lol A friend told me to put the soup in the crock pot and it never burns. duh! One variation from the way my mother did it is that when the beans are cooked I added diced potatoes and carrots for a heartier soup. Depending on the saltiness of the ham, you may want to use salt and pepper. ?Country ham provides plenty.
It isn't a fast process but it feeds you cheap! It's one of the least expensive things you can fix since a pound of pintos is less than $2.00. You can even ship 'em around a couple of shops first! lolol I saw pork neck bones at the grocery yesterday and they would work. Mom often used ham hocks.
Mom served it with cornbread.
