What are you having for dinner?

As part of my Christmas gift from them my sister and BiL are taking me out to a great, locally owned, steak house for dinner.

A crockpot roast is cooking while I bake for tomorrow ..... pumpkin cheesecake, key lime pie, rum meringue pie, gingerbread boys, and carrot cake. Two of each, so I'll probably overdose on sugar nibbling...... I'll have about 4 crockpots going tonight .... I use the crockpot overnight to make stuffing, cornbread casserole, scalloped potatoes, and chicken-rice-broccoli casserole.
Tonight I made a pork roast with potatoes, carrots and celery. Some steamed greens, stuffed mushroom caps and husband had tons of cookies available for dessert.

Going to the home of extended family for dinner. She is making a pork roast and (Italian family branch there) lasagna. Others are bringing all of the appetizers, side dishes and desserts. I made my "gourmet baked mashed potatoes" and my sister made a lemon merangue pie. It will be one of those one-of-a-kind feasts that are so much fun.

We will also watch the football game as many of us are rabid Packers fans!

Turkey, asparagus, mashed potato's, homemade dark chocolate candy, (I made for first time). Went to Olveria street yesterday (sightseeing with daughter and friends), had amazing Mexican street food and Mexican hot chocolate, fun day!!

This was my first ever Christmas dinner at my house with just my family. We usually go to extended family's. So instead of the usual Turkey & Dressing, etc. We had beef brisket, mac & cheese, and broccoli salad.
Honey Baked Ham, cornbread, dirty rice, green beans, brown sugar carrots.... and pumpkin cheesecake, key lime pie, and Tipsy Pie (daquiri, flavored with rum).....
Pork roast with garlic, rosemary and thyme; sweet potatoes with butter & cinnamon sugar; peas with mushrooms; fresh homemade rolls w/ butter and for dessert with coffee a plate of assorted fruitcake, homemade cookies, chocolates and pralines.
Tonight I took husband out for chinese.

Tonight, we had turkey tetrazzini. Leftover turkey, frozen from November. Tomorrow, we'll work on leftovers from Christmas. The main course was bone-in ribeyes, so maybe quesadillas, or something simple like steak and eggs.
Headed home tonight from my holiday route + family visit. Who knows what's in the larder!!!!! Maybe baked potato with "something + cheese" topping?

Have a safe trip!

Took daughter out to dinner, grilled tri-tip and chicken, salad, homemade bread sticks, very wonderful restaurant near me (21.00) for both, sorry it's not shopped, not a chain, what a difference. Walked around town, mobbed outside, sale are booming here.

LisaSTL,
Thanks, 45+ miles of the 240 mile trip, were done at under 25 mph due to road work, heavy rain and traffic volume! Whew!

Oh that sucks! Weather and road construction can be the worst. At least you were on your way home. Like you I really don't like to drive at night when out of town. It's only tolerable when it's within 90 miles or so of home and not raining. I've been known to stop for the night even that close if the driving conditions are badsad smiley

Tonight was the Clean Out the Refrigerator dinner (known here as a COR dinner). Hash browns was the base with the last of the scallions and that half onion in a ziplock sandwich bag. Then there was chopped up leftover rib roast and pork roast, miscellaneous ends of cheese, leftover peas and mushrooms, and the two thin slices of ham somebody left when they made their sandwich (and why, I ask, did they not just finish it?). A couple of over easy eggs and a salad and voila, dinner!
Small grilled sirloin, baked potato, green veg, red wine.

Smothered pork chops here with mashed potatoes to put the gravy on and fresh broccoli.
Had a "cor" dinner here too. Had the twins of those two dinky pieces of ham, cheese slices, crackers, a couple of pieces of beef stick, aspargus and broccoli. Fridge is almost clean. Making a pasta salad tomorrow that will use up rest of the produce.

Will raid the freezer where I stored a half batch of my homemade pasta sauce some time ago, and cook some rotini. Will add garlic bread and, of course, red wine. Christmas supply of dark chocolate will be raided for dessert.

The freezer door flew open and a meatloaf fell out. If food planned an attack then I'm going to conquer and eat it. Will have a twice baked potato casserole with it, lima beans and apple pie.

I browned breaded chicken breast cutlets in olive oil and boiled some peas. It was inviting, great and just enough....
My challenge reminds me of Chopped on Food Network. I have leftovers of heavy cream, fat-free Half and Half, and sour cream. The produce drawer has celery, carrots and green onions. The meat drawer has some baked chicken breast, slivers of pepperoni and salami.

Maybe by the time I get home later this afternoon, a yummy idea will have occurred to me.
I picked up a t-bone from a Krogers shop, grilled onions and mushrooms, tomato slices....yes, I will miss Krogers.

Sounds like casserole time to me! I would sautee the celery, carrots and onions and cut up the meats to throw in with the sautee for just a few minutes. The dairy mixes with a can of cream soup of some sort and the whole thing then stirs into some cooked pasta (preferably elbows or rotelli or similar). Pepper, salt to taste, basil, a touch of garlic. Breadcrumbs over the top and bake 350 until bubbly and browned. Any cheese scraps can mix in when you put it together or grate over the top. Sneak in a can of vegetables or mushrooms if it is light on the veggies and if there is not enough dairy for a reasonably moist mix, add a little white wine or vermouth. If there is too much moisture, add a little corn starch.
