The tests are ongoing, the answers ARE there, you just have to read remember and digest. Even after you pass the test (say for a Southern Fried Chicken outfit) there will be a mini test a few months down the line to ensure you're paying attention. They're not very good about dealing with enquiries, especially if you are querying their practices.
