Probably nothing you can do except delete the subsequent scam emails that are likely to come pouring in and if/when you receive a check to cash BEFORE you do any jobs either destroy it or turn it over to authorities. If you are going to turn it over to authorities, handle it as little as possible and drop it in a ziplock bag to prevent adding fingerprints or smudging them. If the check(s) come by mail, turn them over to the post office. But you can also feel free to shred the stuff and if/when they call to ask when you are planning to do the shops, let them know that you know it is a scam and do not intend to comply.

There is not a lot you can do now, but it does not appear that you gave out your SS# or DOB. I wouldn't worry too much about it, but be careful in the future. The information you gave about yourself can be easily accessed from the internet anyway (or even the phone book if your number is listed).
1) Don't cash any check they send you
2) Hang up on any phone calls and use your caller ID to ignore the calls or block them if that is an option with your system.
3) If materials from them (which will likely include a large check to cash and then wire away a substantial portion of the funds by Western Union) come by US mail, drop them in a ziplock bag to avoid adding fingerprints and turn them over the the post office or by any other delivery form, report the scam to the ftc.com

Aside from that there is not much you can do. You are likely to be pestered by future emails and perhaps by phone calls and may or may not make it onto the 'scam suckers' list for future attention. Use your email to identify any such contacts as 'spam' and hopefully your email provider will keep them out of your in box.
You'll probably receive an increase in junk mail and telemarketing phone calls, but aside from some annoyances, there's nothing that you gave them that 10,000 telemarketers don't already have.
