Casino shop

I don't know what to do, and part of it's my own stupidity. I've been trying to apply to as many shops as possible lately including a visit to the casino. I don't always get accepted for every assignment, but I was for this trip.
The pay is somewhat lucrative, and the instructions seemed doable at first glance. Today, a few hours before the visit, I found myself a little horrified at the instructions:
-gathering names, which is fine except I'd be under surveillance cameras and they want me to record the time for each interaction down to the minute
-asking to speak to the supervisor of the casino
-taking photos of the cash-out receipts...and not somewhere like at an empty stool by a slot machine, but around the cash cage like a weirdo...
I feel like a jerk, especially when the field work administrator seems so desperate for evaluators to visit this place, but I had to surrender my assignment. I wrote that I wasn't feeling well, which is somewhat true from having less than five hours of sleep, but now they're hoping that I'll visit the place later this week! I know I sound lazy, but I really don't want to go there, especially when it's at the other end of the city from where I live, so it takes at least 100 minutes each way since I don't have a car at the moment. I don't know how to decline without resorting to a lame sick excuse, so now I'm praying that we'll be hit with a freak snowstorm since it is late November.

This shop does not seem out of the realm of normal, however, if you're new to shopping, you need more experience and confidence in fulfilling the requirements. Gracefully decline and tell the truth or give it a shot. Most of what you are describing as weird is just weird to you.
Being truthful and upfront is 100% the best policy. Remember that mystery shop company is relying on you to complete that shop for their customer. If you can't, the mature thing to do is tell them right away if not, you put them in a very difficult situation.
There are a few companies that have the casinos available and some I don’t touch with a 10-foot pole. If they don’t let you keep your winnings, forget it. Some have 8 or more assignments in one, which can take hours to compete, and that’s BEFORE the writing it up. If you have the time, I’d do it if the incentives are high enough for you or you’re trying to land a “bigger” assignment down the road.
Thanks for the feedback, everyone! I decided to gracefully decline (ie. made no remarks about the 100+ questionnaire being rather excessive). I did learn a couple of things from the above situation including never take a casino assignment again and to familiarize myself with the companies before applying!
