Register with BestMark and check thier job pages, near the beginning of the month they list well over 300 jobs in New Jersey. Register with them and see if they shop in your area.
There are other companies that do them but require that you not gamble at the establishment being observed or at any other establishments in town. You are there to observe cleanliness, guest services and have a ton of interactions with a ton of names.
