It's been a very, very long time since I saw a hair salon shop in my area. Even though I am in Ohio, I do remember that Baird had some very high-end salon shops in Texas at one time (I have relatives in Texas so I was checking). I don't know if they have them anywhere else or if they still do them at all. The hair salon shops that were in my area a decade or so ago were not high-end and not that great of shops, as the stylist cut my hair unevenly. I don't even remember which MSC it was, sorry.
HS Brands does in my area, but they are not high end, $12 hair cut
The ones that Baird had were very high-end, like $100 or more salon visits? OMG I would be all over that. But not here

Shopping Western NY, Northeast and Central PA, and parts of Ohio and West Virginia. Have car will travel anywhere if the monies right.
Vidal Sassoon used to be shopped but can't remember who and haven't done one in ages.

When the MSC merged the salon stopped their shops. My last color was Jan of 2017 and my last cut was December 2016 ;o(

I did one with RBG two months ago for reimbursement-only, at a salon mentioned here. Coyle has a blowout bar client.

Brandt has some that went up to $300 in Texas but sadly those haven’t been shopped in over a year. My hair misses them, and so does my wallet.

What area of the country are you in?
OP if you live in a metro area check out the craigslist beauty section for free services. I get a lot of free haircuts & blowouts, and cheap color (max $30). These are either students or apprentices.

Hair Cuttery used to be shopped by an MSC that has since merged with another company...but its been a few years since I saw these shops. Another MSC would have Famous Sam's but I haven't seen those in a long time neither...that's OK since I've been going to Hair Cuttery anyway....I discovered their VIP package that I get with every haircut. Well worth the $$$
Silver certified (since 2009) and willing to do shops all around the greater Chicago, NW Indiana, and Southern Wisconsin areas (including airports!.

I did a shop for them about 10 years ago. The stylist was an alcoholic. It was a mess.
Measure Consumer Perspectives have some in my area.

I was wondering this same thing -- my last cut/color with VS was 3 years ago. I was out of the game for a while and I don't know if the old scheduler still works there. I emailed the scheduler that I have been getting emails from lately to find out the skinny. Hopefully, I get a response. If I do, I will let you know.
