Fine Dining - No Reservation

Good Saturday to all. Have any of you performed a fine dining shop where the requirements are NOT to make a reservation? Dining in our fabulous city during prime time i.e. Saturday evening has proven to be a packed house each and every time we go whether it be at our expense or a MS job. I hesitate to do one of these shops in fear of being turned away/total waste of our time or endure a long, long wait (something that we are not willing to do). What has been your experience? Thank you in advance for sharing!

How early on Saturday are you allowed to go? I have found most restaurants to not be full if you can dine before 6 pm. Also can it only be done on Saturday? Sunday evening might also be better. If it can only be done Saturday during prime hours I woypuld not accept the shop.
The companies I work for say that you can go as a walk in, make a reservation and cancel it, or keep the reservation. Is this Coyle?
I did one last week and was specifically instructed not to make a reservation. We decided to go at the beginning of the allowed time period and were seated immediately. Every shop, every city, every experience will probably be different.

I am not applying for this job for reasons stated. We are talking requirements for a Saturday with an arrival time of 7:30pm.
Probably a wise choice. You could wait 1-2 hours for a table. Unless the food is exquisite and an easy report, not worth it. This is similar to another restaurant shop that wants to evaluate the host staff where you have to wait possibly over a hour and they reimburse dinner. I can't justify my time for that.
