The audio recorded shop that I performed had it in the agreement that my recording would be used "for training purposes". I do not see any reason they'd need to associate my name with the interaction for that to happen.
These agents give lots of tours and have consented to being recorded. I doubt very much that they are going to recall which individual it was unless something very unusual happened.
I've worked jobs where I was recorded at random and they would extract bits to use as examples of good responses and other parts as examples of room for improvement. These were used for periodic employee evaluations but also consolidated with others for group training/improvement efforts. At no point did we sit and listen to the entire recording or talk about who the customer was. What would be gained from that?
I expect these recordings are used in a similar fashion.
