Who wants to recommend a cream puff/eclair recipe?

I've decided I'm making cream puffs and chocolate eclairs for the 4th. So far I've tried three recipes and none of them are quite right. I have nine other recipes I'm considering. They are all similar, but slightly different. One calls for cornstarch, but the rest don't. A few have you add milk. Some call for sugar. One I tried already was with milk and they were really wet.

Anyone have any recipes they've tried and would like to share?

Here's something with the same ingredients as the OLD Betty Crocker cookbook. I made these a lot when I was a kid. Super easy, and always turned out well.

1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
Directions

Preheat oven to 425 degrees F.
In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.

Elmer's one sounds very familiar. Haven't made them in years, but I remember it being something like that and as you add the eggs the dough becomes a nice gooey ball closer to a cookie dough than a cake batter. And the oven really does need to be hot to get the stuff to puff appropriately, so do check your temperature. Otherwise you will get crusty looking ones with soggy insides. The high heat will crust quickly so air is trapped inside, I think.
