Can\should I put mystery shopper on my resume?? I feel as a brand ambassador, this would help beef up my resume, esp the audit jobs I've done.

I've added it to mine, but only because it's been ten years since I had a "regular" job. I'd rather a potential employer not think I've been entirely out of the business world all that time.

If your path dictates you walk through hell, do it as though you own the place. -unknown

I use "Consultant" to encompass mystery shopping, business verifications, audits, and traditional scientific and statistical consulting. "Consultant" is an accepted job title, albeit somewhat nebulous.
