In my area, there is no variation between which cold subs are allowed on the shop and which cold subs are available on the JM menu. None. It may be different where you are.

No but I just checked the guidelines, since you can do that with this MSC before accepting the shop. The 10 allowed subs are the only cold subs listed on menus in my area. Again, there may be more in other regions. But not here.
