To the vegan/vegetarians

I don't think I'll have trouble transitioning but the only question I have are what are some suggestions for non-egg based egg substitutes? Do you still make things like cakes or cookies that are traditionally made with animal by-products like butter and eggs? Thanks!

Yes - you can use applesauce or other fruit sauces, nut butters and vegetable oils for eggs and butter. Generally you end up with a wetter product, it isn't better or worse though, just different.
Whole foods sells an egg-subsitute that work just like eggs. I'm not Vegan, but while viiting my daughter we had a dessert party, and one of her friends is a Vegan. We made brownies (gluten free mix) with egg subsitute and they were delicious.Molassas works as well as applesauce which gets a little gritty in cookies, but, egg subsitute works great!

My SO is vegan so I deal with this on a daily basis...

Get the Ener-G egg replacer at whole foods or similar health-food store. Use Earth Balance spread for butter. It also comes in sticks. Use the recipes you always have, but replace...replace...replace.

My experience is that the cakes are a bit more dense. Because of that, I use gluten free baking mixes, which tend to be lighter. Pamela's is a good one a can recommend and I love the vegan pancakes I make with it.
