Can someone let me know which companies are offering tax prep mystery shops?

I did mine through Market Force. If you take one of their shops, PM me.
HS Brands has shops. Keep in mind, they pay 2 months later.
Bare has shops, but you do not file your own taxes. They give you the documentation.

Try Certified Field Associates. They are an arm of Market Force and had some of the same tax shops.
