How do you guys explain mystery shopping as your job to family and friends?

I meant freeze half a cake not cake mix. ????

Or divide it and put half in a ziplock or an air-tight container and keep in the cupboard. If you freeze cake mix, does moisture get to it and make it clumpy?

@CoffeeQueen wrote:

You could freeze half.

hmmm, I need one for a smaller cake. Using half a cake mix, etc. just doesn't cut it for a small household.

We freeze most deserts. We won't eat a whole cake or something before it goes bad.

On a side note. The other day I saw an article about 10 things to make in your waffle iron besides waffles. One of them was fill it with a single layer of frozen tater tots. Holy cows. Sooooooo good.

Thank you doesn't even come close to my appreciation for this information. I looked them up, and they sell on Amazon and their own website. Yippee! Another option for my diabetic mother.

Oh, and if you don't like aspartame, at Whole Foods and Earth Fare they sell a pudding mix that has stevia in it (Simply Delish) that's really good. I have had that one many times and it's really tasty.

I've done that one. It's awesome.

You can also mix defrosted tots with scrambled egg and bacon, and it makes whole breakfast waffle!
Yes, I have bought it from Amazon before. Sometimes your local grocery store will get it in if you ask for it, our Giant Eagle carries it. I am partial to the chocolate one. Sans Sucre is another sugar free product on Amazon that has good stuff. They have a great chocolate brownie mix. Also consider when you make sugar free pudding using almond milk instead of regular milk because milk has lactose which can raise her blood sugar. But you have to adjust the amount of almond milk (there are instructions on the box) because you have to use a lot less of it for the pudding to set properly. Might make some nice pudding pops for your mom for the summer!

I'm making sugar free brownies and use a bit of maple syrup and Stevia, I don't like real sweet, but putting in chocolate chunks helps. I use Stevia and although it's not strong, it helps...you get used to it. I also use coconut milk or Almond milk.

Live consciously....
I like organic local honey, not a big maple syrup fan unless it's actually on pancakes or waffles. I still prefer honey on those, too, but I hate commercial fake syrups. My mother grew up in Minnesota and she and my grandpa used to get maple syrup from the trees and boil it down. That was back in the early 1930s. She loved maple syrup. I don't miss maple syrup but I sure do miss her.
Only my immediate family and best friend know what I do. I don't tell other family or friends anymore because they think it's a big joke. They don't understand how much I can make and how not just any dummy can do this. It does require a certain amount of skill, preparation and dedication. It doesn't bother me though because I don't want any competition LOL! Every now and then I get the urge to brag about a great bonus on Facebook, but I never have and likely never will!!
I'll have to check out Sans Sucre. I only buy unsweetened almond milk now. I have bad allergies and every year I could count on a sinus infection every October because I would get so stuffy. I cut out drinking cow's milk, and ever since, I'm not so stuffy - huge difference. I still eat cheese and yogurt so I'm not lactose intolerant.
