Or divide it and put half in a ziplock or an air-tight container and keep in the cupboard. If you freeze cake mix, does moisture get to it and make it clumpy?

You could freeze half.

hmmm, I need one for a smaller cake. Using half a cake mix, etc. just doesn't cut it for a small household.

Oh, and if you don't like aspartame, at Whole Foods and Earth Fare they sell a pudding mix that has stevia in it (Simply Delish) that's really good. I have had that one many times and it's really tasty.

The other day I saw an article about 10 things to make in your waffle iron besides waffles. One of them was fill it with a single layer of frozen tater tots. Holy cows. Sooooooo good.

Thank you doesn't even come close to my appreciation for this information. I looked them up, and they sell on Amazon and their own website. Yippee! Another option for my diabetic mother.

Yes, I have bought it from Amazon before. Sometimes your local grocery store will get it in if you ask for it, our Giant Eagle carries it. I am partial to the chocolate one. Sans Sucre is another sugar free product on Amazon that has good stuff. They have a great chocolate brownie mix. Also consider when you make sugar free pudding using almond milk instead of regular milk because milk has lactose which can raise her blood sugar. But you have to adjust the amount of almond milk (there are instructions on the box) because you have to use a lot less of it for the pudding to set properly. Might make some nice pudding pops for your mom for the summer!
