Hot Dip?

I got so busy, I opted for the easy way. I don't know whether to thank BGriffin or curse him since now I'm totally hooked on cream cheese and Rotel. Yum! Easy peasy too.

For breakfast, I just did an overnight French toast. I took tips from everyone and mashed them together for a lazy LJ French toast. Left sliced French bread out on the counter to dry, placed it in a dish and covered it with eggs whisked quickly with milk (I meant to use cream, but grabbed the wrong carton) and then sweetened it with a splash of eggnog instead of using vanilla, spices and sugar. See? Lazy. I left that in the fridge over night and stuck it in the oven in the morning. It ended up sticking to the pan, but I pried it off and lost the the crispy bottom. Oh well. It was good and didn't take up my time.

I meant to make my own salsa too, but forgot the cilantro so I'll make it for New Years Eve instead. I had peel and eat shrimp in the freezer that only needed to be thawed, but never got to it. I think I'll make the crab dip tonight and finish off the salmon spread .. um.. like now since all this talk about food made me hungry again. tongue sticking out smiley

Lucky7s, are you mixing those together or layering? It does sound good - like nachos with less mess.

I have mixed it. I do not see how you could do layers with these ingredients. It is very good. Of course it would be better with home made refried beans and homemade salsa. yikes smiling smiley smiling smiley

I do this one, but I spread a can of refried beans in a small casserole dish, then a few spoonfuls of salsa, handful of cheddar cheese, more salsa. Bake until it's bubbly and then top it with sour cream. They will eat it up I guarantee it.
I think I'll do that. BTW, I am now hooked on that damn cream cheese/Rotel thing. I polished off a full batch in two days BY MYSELF! Oh, and I didn't look carefully at BGriffin's instructions and only used one package of cream cheese to the can of Rotel. Yowza, is it ever good. I'm not even going to try to make it "correctly".
