I am making some couscous to have with General Tso's chicken (from the hot bar) and mixed melon salad, from the salad bar. No motivation for real cooking today.

I still have some couscous. So, I am defrosting some lamb that I cooked a few weeks ago to mix with that. Will probably saute some fresh spinach with garlic to go with.

Quesadilla with chicken and corn and then my homemade cilantro pesto on top of it. Also some sauteed celery and onions and my carnitas stock.
Went to the restaurant on the nearby lake and had a flatbread pizza, hubby had the 1/2 burger. Nice and relaxing, 82 degrees and watched the sunset.
Found the cutest filet mignon wrapped in bacon, will broil it and have some Cole Slaw....

huge salad with my homemade dressing, roasted cauliflower quesadilla with my cilantro pesto
We just had a seared Ahi tuna appetizer and fish sandwiches with cold draft beer at the restaurant on the lake. Temps were about 74...lovely. Watched the sunset again.

Braised lamb (from lamb shanks), yellow rice, topped with feta cheese, chopped tomatoes and olives. Sounds like that calls for a little red wine.

While reorganizing the freezer I found a couple of well preserved bratwurst. Will have one with cole slaw and potato salad tonight, and repeat that on Monday night.

I had a WaWa shop so I had a delish turkey and ham club with added avocado. Yum!

@walesmaven when I went to Wisconsin to visit my brother in October, I brought home a giant cooler of wursts of all sorts and I have saved one of each to have as a big Bavarian feast for myself and my BF at the end of the summer as a farewell tourist party. I can't wait and right now I wish I had saved more than one each so I could have one now!

Shopping the South Jersey Shore
Another find in the freezer: homemade pulled pork. I will combine some with baked beans for tonight, along with potato salad and coleslaw. I will probably make most of it into chili with pinto beans and use that for several Tex-Mex themed dishes.
