Defrosting some homemade chili. Will have some gauc and chips with that. Tomorrow is a grocery day (not a shop) and I may follow Irene's lead and grab a rotisserie chicken to ease my way back into dealing with dinner prep activities.

Making stuffing, roasted chicken, cranberry sauce, mayo sandwiches.
I'm not sure where most of you are from, but COSTCO has the best chickens for $5. I get three meals for my husband and I. First just the breast with veggies, gravy, potato, second chicken salad with the rest of the white meat, third all of the rest of the chicken, bones and all parts go into the pot for homemade chicken soup.

Shopper8...I must eat more than you two...I get four good meals, chicken sandwich, chicken black bean Tostada salad, a taco meal and a good portion of chicken with mashed potato and veggies, but that's no cooking or dishes, then the rest makes a good soup, and on Friday, five dollars for a good chicken, not salty...not a Costco member.....need a Von's reward card.

Butternut squash stuffed with hamburger/salsa/pepperjack cheese mixture, and spiced apples. The squash, salsa and apples are from the garden, so a really economical meal.

Bought Wild Salmon from Alaska waters, roasted with lemon and garlic, spinach avocado/tomato.orange salad.

My wife LOVES fresh cranberry sauce, so I told her the fresh cranberries had hit the stores and what did she want to go with it? She said (I kid you not) mashed potatoes. Okay, well that's going to be a weird dinner. I like them with stuffing and turkey, not a fan of mashed potatoes. So I guess thanksgiving dinner, it is. She can have the leftovers with mashed potatoes tomorrow when I go back to my usual beans and tortillas.
I will pick up some deli roast beef when I am at the grocery store (not MS) today. With mashed potato and steamed fresh spinach, I will have supper for tonight and leftovers for Friday night. Tomorrow I will have time to make a BIG pot of meaty pasta sauce with mushrooms, some for 2 meals this week and the rest to freeze for future meals.

It seems that I will be having an accident for dinner. I assembled a hearty tomato-based pasta sauce and then dumped in the defrosted package of shredded, cook beef to it. Ooops! That package actually had shredded cooked lamb in it!

Anyone ever intentionally make a tomato-based pasta sauce with lamb? It is a BIG batch of sauce, so I am hoping for the best.

This will go over angel hair pasta, with side of spinach and some garlic bread.

Just put in crockpot a duo of chuck and chicken, potato's, carrots and my turmeric plus bone broth and seasonings....will cook for 8 hours and have enough for the next few days plus freezing a bit.

Shopped a small grocery shop today. I love their Duck liver pate, with fresh French bread and of course wine.
My husband is having left over Chinese.
I roasted head of broccoli, a can of garbanzo's, a half a bag of carrot chips and a lemon cut up, in the oven . OMG it's delicious. The lemon gets kind of milder, and you grab a chunk and squeeze it on your veggies, so good. Good to just eat a wedge too.
CQ...never heard of doing that, I do roast Cauliflower and use lemon for everything, will try that....how healthy can you get?

I saw it on a recipe for roasted brussel sprouts (which I love). I wanted to try it so threw some wedges into my pan of veggies to roast. I think I'm hooked now. They also roasted garlic still in the peel just lightly smashed. I didn't try that because I didn't have any and it's raining. Didn't want to go out.
For dinner (much much later LOL) I will heat up the roasted chicken, stuffing and mashed potatoes to have with the home made cranberry-lime sauce I made the other day.
