carmelized onions and mushrooms with spinach linguine and a nice big salad. Decided to have a vegetarian dinner.
I haven't decided what to make for dinner but the spouse requested a pineapple upside down cake so that is in the oven.

And I decided to make old fashioned fried potatoes with some smoked sausage, and dinner salads.

The last of the deli Italian roast beef (rare). Will make a baked potato and finish the steamed broccoli. That is great just served cold, instead of reheating, it since I do not like it mushy, lol.

I am poaching a couple of turkey thighs in the slow cooker and will use that meat as a basis for future menu items.

Frozen pizza because DH had an on-line class over dinner time. Yesterday we had salmon steaks with steamed asparagus.
New recipe in the crock pot. Layered potato slices, jalapeno sausage cut thin, onions, cheese soup, cream of mushroom soup. It turned out good, it's a keeper.
That sounds really good!
I made home made pizza at my spouses request. The crust was delightful. Light and tender and crisp on the outside. Ill probably never be able to replicate it.
Homemade chicken noodle soup with celery, carrots, onions, herbs, garlic, grilled chicken from a past BBQ, and lots of egg noodles.
I made vegetable beef soup. I started the beef, herbs and aromatics last night in the crock pot on low and added the carrots and potatoes today. It's really good. The beef and broth cooking overnight with the herbs is a technique i am going to use a lot. It's full of carrots, potatoes, corn, barley and tomatoes and I threw a chunk of cabbage in there for good measure and then fished it out after it was fully cooked and soft.
Today I am looking at a jar of four cheese Alfredo sauce and wondering if it would be a good or bad idea to add some sauteed mushrooms to it. (Opinions, please!) I am defrosting some of the poached chicken to combine with it to serve with noodles or some other pasta sort of thing. Broccoli seems like the obvious addition.

One way or another, it will be a sort of elegant man and cheese dinner, lol.

Kim's opinion - broccoli and mushrooms together; chicken and mushrooms; broccoli, chicken and mushrooms; but not mushrooms alone. ☺

Thanks, Kimmie,,
I was not thinking of mudrooms alone. But, I did not make that clear. Not enough coffee early this AM. Sauce, chicken, mushrooms and broccoli with noodles or other pasta.

Tonight, I'll be grilling steak, and drinking alcohol that I've stockpiled over the last 2 years with an MSC that did St. Patrick's Day shops (oh, that was so good). I honestly have about 15 more bottles of Jameson to drink, and other comparable brands).
Eric,
I knew from the first time I met you that you were the smartest shopper around. Once more, you have shown that, lol. Raising a glass of good wine (stockpiled, of course) to you and yours.

Would you like some poached chicken dark meat mixed in with that, or on the side ?

Last night I made Navajo Tacos. Tonight will be this recipe: [www.aspicyperspective.com] . I need to do something new with chicken and have a jar of roasted red peppers in the pantry.
Cut up sausage, pasta, cream of something, milk, onion, garlic, basil, cheese, cooked in the oven with broccoli and salad.
