What are you having for dinner? AGAIN!

made, I don't eat mayonnaise unless I make it. And I almost never make it. I have made a spicy aoli with chili oil that worked very well as a dressing for potato salad, but that was a one time thing. I do my very best to avoid soybean oil, or anything at all with soy in it. Soy sauce is a major weakness, it makes everything better, especially beef.

Speaking of which, I found a bottom round roast marked down at Kroger today, I'm going to slice it and marinate it and make some jerky in my my *fancy* dehydrater machine.

Tonight was lentil soup followed by Board Head Oven Roast chicken sandwiches and cole slaw.
My son attempted Hoppin' John.. It isn't edible. I took one bite and told him to feed it to the chickens. They can eat cooked beans, not raw. Now that I'm in the mood to eat Hoppin' John, I'm going to have to go out to the kitchen and do it myself.

I ended up having a salad and a huge hunk of corn bread..
Trader Joes macaroni and cheese
oranges
tea and coffee to stay warm.

On the plus side, I just found a nearby restaurant that has happy hour on Wednesdays - one buck oysters on the raw bar. I can make a whole meal on a dozen. I love them.

I layered roasted portobello with jack cheese, then roasted pepper, more cheese and roasted eggplant on top. A vegetarian dinner just because I didn’t feel like any meat.
My son made stuffed bell pepper soup, with only one bell pepper. I should have read the ingredients more closely. But the soup was pretty good even with only one bell pepper.

I saw a reel on Faciebutts for a sheetpan meal with chicken broccoli and potatoes, and BWW garlic parmesan sauce. My son made it with pork cutlets because all of the chicken we have is frozen, and it was delicous.
I need to get into making sheetpan meals....so appealing.

Oh, yes. I have yet to make a sheet pan dinner. I would need to make at least 3. I got home late tonight. Everyone is sadly on their own, LOL.

In an effort to get my son to keep the oven on.. So far this evening I've had salmon, spinach, buffalo wings, and a Mrs. Smith's apple pie. But I think of oven is off now.
I am on a low carb diet. Yesterday I made a creamy ham and cabbage soup in the crockpot. It was really good.
I'm not a big fan of cured meats. I don't eat ham, except in an italian sub sandwich in the form of spicy Capicola. I was low carb for a lot of years, but now, not so much. I still don't eat a lot of bread, only in sandwich form, I don't eat bread just to eat bread, like toast or dinner rolls. And I seem to have grown an aversion to the texture of pasta. I can sometimes manage a few bites of lasagna if the noodles aren't the main ingredient.

For dinner tonight I had a hamburger pattie on a bolio roll, that I cut the ends off, with cheese, tomato, spinach and mustard. and some french fries from the air fryer, because that is the only way my son knowns how to make them crispy.
My doctored ramen soup that turned out like Asian restaurant quality.
So simple to make, warmed me up.

I went out to a late lunch yesterday. I count my calories so I didn’t eat my mac n cheese from my pick 2 meal (not Panera, but similar lunch menu section). I will be adding some crushed up meatballs to it to make my own cheeseburger macaroni type meal (without all the artificial dry cheese sauce) along with a side salad or broccoli. Not sure which veg is closest to expiration so that will decide it. Probably broccoli since I like broccoli on my Mac too.
Today was Five Guys after 5 days snowed in and home cooking. It was nice to get out of the house!
Chicken Tortilla Soup topped with avocado made in my slow cooker - yummy. I have Cara Cara oranges (Costco) and Haagen Dazs ice cream bars for dessert.
We got great weather here today, it was over 50° After almost a week of never making it out of the 30's it was great!. We went out and collected pizzas, one from Hunt Bros, and one from Pizza hut, my son did a couple gas stations and I did a lighting audit. So I'm eating cold pizza and drinking gingerale.
I had pizza too....
Abundant sunshine here yesterday, temps were cold, but all that sun, when you are in it..made things
nice and warmish.
Ran a bunch of errands.
Not much of an appetite all day.
Stopped at local pizzeria for one slice of what they call here "grandma pizza" (cheese on bottom, sauce on top)
iced coffee, couple pieces of the blackest European licorice to settle my stomach

I sent my son to the cheapo meato store (Fresh Value), They had a 3lb pack of smoked sausage for $3, what could go wrong.. lol. He also got the meat that I wanted that was on sale, but I haven't been allowed to eat any of that.

Tonight he made a sausage sandwich with that sausage, it's actually the second time, but I guess he cooked it better last time? or there was more stuff in the roll that made it taste better last time? The sausage was crunchy, had a weird texture, and the flavor wasn't terrific. I managed to eat it. Then he brought me a plate of tasteless, unseasoned fried okra, and lukewarm steamed frozen broccoli. Dinner tonight was NOT A HIT.
Black sea bass, sauteed asparagus, dinner rolls. My Mom created. Sooo delicious. Big green grapes, oranges and cherries.

We did grocery shopping this afternoon, I got a marked down baked chicken, and I ate almost half of it. but precious little else.. I had some of my son's homemade bread with apricot jam on it with my nighttime meds, and Essiac tea.
Veggie fried rice, Mongolian tofu, steamed broccoli drizzled with hot oil and minced garlic. Chocolate covered raisins.
Been cooking all day. Pork tenderloin medallions with dark dipping sauce, stuffed mushrooms, build your own fish tacos and fried artichoke hearts w/ my secret tarragon ranch dipping sauce. All in the oven warmer. Tested my new mini ‘Fry Daddy’ that was one of my Xmas presents. Works great. 3 guys (obnoxious Pat fans) and my BF will be stuffing their faces while I retire to take a bath, read fashion, home and gardening mags and binge watching a true crime series. Have fun y’all!
