What are you having for dinner? AGAIN!

I have defrosted some of that chicken, salsa and black bean soup for supper tonight.
Last night was chicken schnitzel, baked potato, green beans.

Home-smoked fresh salmon, baked potato, spinach wilted with olive oil and garlic, a nice dark Malbec.

Dried bean curd, shiitake mushroom, scallions and chicken soup. Smells so good. No one will devour it except me and one other. Green tea, Edible arrangements fruit and Krispy Kreme donuts. Yaaas!

Cranberries (this year's recipe involved tropical fruit and selected spices) stirred into plain yogurt. Perfect. Better than anything with ice cream or whipped cream. Oh, my......

Meal in a box. It fits neatly into a purse, has less than 200 calories, and enough protein and fiber to make me strong. !

The last of Moe's chips and salsas. Sicilian pizza, spinach and cheese calzones, eggplant and chicken heroes. High protein brownies for dessert. Can't wait until it's time for so long with exception of my Mom who is staying. :-)

New Year’s fare - Baked ham, cast iron skillet cornbread, Hoppin John with black eyed peas, sautéed spinach and garlic. Huge meal. I took portions to two shut-ins and have enough left to feed us for days.

I will be assembling an "Italianate" casserole. Marinara sauce, a layer of fresh spinach that I have sauteed in garlic and olive oil, a layer of stuffed manicotti (NOT manicurist!) with a few meatballs, more sauce, lots of mozzarella. Also, garlic bread and red wine. A guest will arrive from Chicago sometime this evening and this can be warmed up whenever her train arrival time permits. More about said guest and her "mission" here after I have made up the guest room bed and done other prep work.

Yesterday, Impossible burgers topped with Swiss cheese, tomatoes, lettuce and onions. Curly fries. Tonight, grilled chicken, stuffed mushrooms, string beans and baked potatoes.

2 lbs. of fresh lo mein with; two bricks of organic tofu, 2 lbs. chicken breast, lb. of bean sprouts, 2 lbs.bok choy, julienned carrots. Chicken and veggie wonton soup (Costco) topped with shaved ginger and chopped scallions. So delicious. Not hard, but oh so tedious.

Yesterday, steamed flounder filets topped with scallions, ginger, garlic and soy sauce. Jasmine rice, baby bok choy. Tonight, my crew is making Poke bowls. Cilantro/lime/chili jasmine rice, cubed tofu, green/red peppers, red onions topped with alfalfa sprouts. I just know DH is still going to be hungry afterwards, LOL.

Aldi had choice chuck roast at a good price. So, I am making pot roast with shiitake mushroom gravy, mashed potatoes, steamed carrots, and (if I don't run out of energy) steamed broccoli. A nice Argentinian Malbec with, plus chocolate for dessert.
