I had kare kare and leche flan which are Filipino dishes leftover from a Boxing Day Christmas party.
Just made Quiona/carrot soup (so good), and a French Boule bread from Whole Food (ate half),,,,,,I will have a soup truck in my next life.

In honor of my bad head cold I will get some of my homemade chicken bone broth concentrate out of the freezer to reconstitute. Then will add carrots, mushrooms, celery and rice noodles to make a thick soup.

Ribs, black eye peas, stuffed jalapenos, mashed potatoes, peach cobbler. All oven and stove, no grilling today. The high is 34, we are having the coldest winter in over a decade. I know it's puny for some folks, but south central TX it is unusual. Happy New Year to all.
Eggplant Parmesan on a bed of pasta. My son actually likes the eggplant because it gets nice and crispy.

Homemade chicken noodle soup, garlic bread
Last night was my infamous smoked chicken pot pie with roasted butternut squash. The nextover (planned leftovers) squash will become risotto tonight.

Delicious baked salmon, mashed sweet potatoes, steamed broccoli & fresh acorn squash cooked in the microwave.
Tuna melt with hard boiled egg and cheese grilled...almond milk.... I'm so frckin good.
