After fortifying myself with real, local, yummy, Mexican food, I added a few assignments to my version of a mini-route. Earlier today, I cleaned off my porch. Unfortunately, I had to go to another job and did not have time to enjoy my clean porch. Oh, well. There's always next week...

Returned from Kohl's with the $5.00 coupon they sent for being a member for 5 years, and another 30% off coupon, just because, found a beautiful dress for my daughter by Lauren Conrad who's line is amazing, young and has a big following.Bought myself a pair of jeans, not caring for their handbags even on sale, like Michael Kors. or my Louie purse's which I wear over and over. Makeup with SPF and a blender on sale, plus the 30% coupon.....good therapy

Retmainder of the day, answered my friend SandyF's beautiful PM about the cruelty i've endured on the forum...she was aghast...thanks Sandy, appreciated, but the old saying.."When the going gets tough, the tough go shopping" came to life...smiling smiley Now it's pool time.....

When Kohl's has a sale they really have great bargains, and there is no place better for infants and toddler's outfits of good quality and fun designs. I buy stuff for my sister's grandkids there often!

MF Johnston, I made some stuffed mushrooms this afternoon that would have gone great with your salmon. I took goat cheese, asparagus, fresh dill, red bell pepper, and red onion. I roasted a bulb of garlic, then peeled it. I chopped everything and mixed it in with the goat cheese and some pepper, then mixed bread crumbs and freshly grated parmesan cheese in it. I stuffed some crimini mushrooms with the mixture and topped it with crumbled bacon, then baked them in the oven with a drizzle of extra vigrin olive oil and white wine. I am taking them to my MIL's house for dinner tonight. My husband snuck one and I had to stop him from eating anymore of them!

so, I was in the right place. Regular cost was 79.00. I notice the cute style' for kids, if only I had a Grandchild, not in the cards. Their under garments are great as well. Yay! I enjoyed my clean porch for five minutes. (This is important. Every minute counts! There are only 2-3 months of weather for porch time left this year. After that, it will be too cold, wet, or icy to spend time out there.)

There was no camping trip after all. Instead, there was an opportunity to find out about a job change. One job offers a change-up and I will take advantage of that, if possible. That job would become efficient for me. Wish me luck! smiling smiley

Today has been spent "prettying up" the patio. I cleaned the furniture before putting on new cushions, stained the wood shelves and handle on the grill/smoker and cleaned the gas grill inside and out. Later this evening I will be cleaning out the refrigerator before the replacement is delivered tomorrow. Thank goodness for service contracts because the fridge was just two years old in December. All it needs is a new freezer door, but the store would rather replace the whole thing. Fine by me. The sales associate said they can haul away the "old" one or I can just keep it. Guess which I chosewinking smiley

Today I did the grocery shopping, put the sheets on our newly-purchased guest bedroom trundle bed, cooked a pot of garbanzo beans (and froze then in dinner-sized containers), and roasted some coffee beans, Now I'm ready to take a walk of at least 4,000 steps so I can hit the 10,000 mark.

I'm just about off canned beans. I keep jars of dried black, cannellini, garbanzo and black eyed peas and just cook them as I need them. It takes a little more advance planning, but the result is worth the effort.

Our first few sets of beans came from Sweet Maria's (which actually has some great information about roasting). Then Hubby figured out that you could get green beans cheaper on Amazon.

Yes, roasted garbanzo beans are yummy. So is hummus and stew made from chickpeas, random vegetables, and Indian simmering sauce.

My downstairs freezer has no meat in it, but there are anywhere between 8 and 16 deli containers of frozen beans--pinto, black, garbanzo, and sometimes strange things I find at the ethnic market. Because I'm a spur of the moment meal planner I don't have time to cook beans from scratch as needed, so I do them two pounds at a time in the stock pot.

I go back and forth between planning a head and working last minute. Beans take about two hours and we normally eat around 7 or 7:30 so it tends to work out for me.

I just got the rig. I'm crazy busy with deadlines and the kitchen and bathroom getting redone so I"m just going to watch videos for now. in a week or two when I have time I'll start practicing. As a former pianist I know better than most that practice makes perfect.

I used to play the piano, too, and guitar. I don't have much time for it anymore. Good luck with the remodeling and also with the video stuff!
You wouldn't make hummus out of roasted chickpeas. They get nice and crunchy making them a healthy snack.

Oh, I see. It's more like dehydrating. I have been on a roasted garlic kick lately, I see that it isn't nearly the same thing, though I imagine I could roast garilc until it became crunchy. Wow that would be some intense...breath, LOL.
My favorite pasta like forever now is simply angel hair with pine nuts, olive oil and garlic. I love to saute the garlic until it is slightly crunchy but not yet burned. For a few years I worked for a restaurant owner from Sicily. He was amazed how much garlic I would use, LOL.

My husband and I have sat around more than once with a few bottles of very good dry red wine, several bulbs of roasted garlic, a dish with EVOO and fresh herbs, and a loaf of crusty artisan bread. Squeeze garlic into the oil and herb mixture, dip bread, and sip wine. Rinse and repeat. That was dinner!!!!!
I roast garbanzo's all the time. Drain a can or two really well. I put them in a colander and let them sit a few minutes. Then put them in a bowl and drizzle some olive oil. Add a spoonful of chopped garlic, and some rosemary. Then spread them in a flat layer in a cookie sheet and put them in the oven at 350 for 30 minutes. Take them out and turn them over, put them back in for about another 30. You want them to start turning brown. I like them still a little chewy and crisp on the outside, but some people love them really crunchy. experiment with the length of time you cook them. They make a great low calorie snack.
Sounds nice. I don't know much about cooking garbanzo beans, but I do know that with other types of beans they have to cook a long time because they are hard as pebbles. Are raw garbanzo beans (not from the can) also hard? I was just curious because I was wondering if you cooked them from a raw, dry state and then roasted them...well, do they get really hard again? Or are they light and soft when raw and you could actually cook them for a much lesser amount of time in water before roasting them?
Raw garbanzos are very hard like any other beans. I have never cooked them, I always buy them in cans so I can't answer the rest of your question. LOL

Well if they are hard as a rock like other beans they likely still need a very long cooking time. Isn't it weird that when you roast beans that they stay light and crisp instead of getting hard as a rock all over again?

I have an issue with canned beans because of the goo that looks like snot. Yes, I do rinse and drain them, but it seems to me like you lose vitamins when you drain water out of a canned item. Don't you think a lot of nutrients end up in the water (or goo)? I never thought much about cooking ahead of time and freezing them for future use, I usually subject myself to the torture of planning well in advance and cooking them in a small crockpot for several days before I need them. But now I am curious if I would get the goo issue with beans that had been cooked ahead and frozen.
