Went to the gym again this morning (which makes two days in a row--yeah me!) Met with a facility coordinator for a church where a group I belong to is having a potluck next month. Ran some errands on the way home. T

I'm always worried about calories, but go off now and then when worth it.

I made some killer stuffed jalapenos last night...I cored 10 huge jalapenos (probably 5 inches long each and about 1 inch in diameter), then made a mixture of Vermont white sharp cheddar, goat cheese, cream cheese, bread crumbs, and garlic powder, then stuffed the jalapenos with the mixture and large uncooked peeled and deveined shrimp...then wrapped them with partially cooked bacon (used toothpicks to keep the bacon in place). Then I cooked them in the oven until the bacon was crisp. They were pretty spectacular!

Hey Irene! I went back 5 pages and couldn't find the recipe thread. If you can put the link up, I'll go ahead and transfer this recipe over to there. But for now, here it is. My recipe is what you might call the "lazy man's" (or woman's...haha!) recipe. While you can cook up your own fresh carrots and cut them up, I use 2 cans of the mixed vegetables. I had some leftover chicken from a whole organic chicken I had cooked up on Sunday, so I cut up a bunch of that and added it to the veggies. Then I opened a can of cream of chicken and added about half the can plus about 1/4 cup of left over gravy I had to the mix and stirred it up. If I hadn't had any gravy, I would have put in about 3/4 can of the cream of chicken soup. I also added about 1/4 cup chicken broth and a few shakes of pepper, and mixed it all up good, and placed it in a sprayed (Pam type) casserole dish about 7 x 10" in size.

For the crust, I only cover the top, and don't make it like a real pie. (Hence, the "lazy" portion of the recipe!) I take one cup of a low-carb Bisquik type mix (you can use just regular Bisquick). To this I add about 2 TBSP melted butter or margerine (or you can use oil), and about 2 TBSP Splenda (you can use sugar or whatever). Then I add at least 3/4 cup milk (you can use almond/soy, whatever) and mix till lightly thickened but easy to stir. Might need a bit more milk, it's up to you. Once mixed thoroughly, pour over veggie/chicken mix, and sort of smooth it all over with the back of the spoon. Bake at 375 for about 40 min or so, or until crust is nice and brown. Let set for a good 10 minutes before eating. It's GREAT the next day too, after all the flavors have really settled in!
I make my own sauce because it really is easy. Just a veloute with some cream added if it is on hand, milk if it is not. I also hated the frozen ones as a kid and was forced to eat them way too often. The carrots are replaced with butternut squash and the peas with spinach. I don't use premade pie crusts because they usually contain hydrogenated fats. Instead I use all butter puff pastrysmiling smiley I never said it wasn't a decadent pot pie, LOL.

Going to Verizon store to get my phone synched with my email. Email required a password update and that locked my phone out, apparently. So have done 3 days of photo intense shops, including 2 hotel overnights and a whole bunch of garages, , on deadline, messaged the pix to my housemate and/or to a shopper buddy from the forum who then emailed them so that I could capture them on my computer. This is the first time that I can get help. I am pooped and bedraggled! But, it's great to have a friend when in need!

I finally completed my physiotherapy and my very first mshopping since my accident in September. It was a very simple one but my very first time mshopping with a walker.

Afterwards, I went grocery shopping and then decided to download some apps to allow me to
mshopping while in front of my PC.

I also shredded so many of those 2017 files to have more space in my drawer.

Now I am starting anew and hope I could walk soon without any device.

Me too, risinghorizon. I am sorry to hear you had an accident, I wish you full recovery.
When shopping turns into a technical nightmare. I've been there. After doing 8 highly bonused gas stations all of the photos were trapped on my phone which died on the way home. I had the cloud settings to upload when I was using wifi. Never again. I will upload between stations even if I have to find wifi to do it. Of course data gets cheaper and cheaper so it's not that much of an issue anymore.

Went to do my BV and take my 15 pic's only to discover my battery was dead.....oh hum, back home, re-charge and out again, this job turned into a nightmare time wise...total retirement comes to mind. I really went through this for a heafty 17.00....PLEASE!!!
